If you replace the burrs don't take the grinder apart, just remove the hopper, seal, upper burr ring and wingnut. Then use a clean 13/16-inch socket, a short extension, a ratchet handle and a gentle clockwise tap.

I’ve had my Encore for a month. I got the pre-owned unit and upgraded the burr on day 1 (spent $145 for everything including ~$15 shipping). I’m impressed by the repair philosophy of Baratza and the quality of this machine. It’s relative quiet (had a Braun blade grinder before this that was so loud) and fast with widely adjustable grind settings. I wish there was a way to lock the motor from the outside to replace the burr. Maybe a small button on the bottom would save the trouble of removing the case just to unscrew the burr that is otherwise completely accessible from the top. The plastic case is rigid, slick, and not shaped for easy removal. This made the disassembly harder than it need to be. The videos provided by Baratza for repairs could also be better. They need more detail and links to instructions and other related videos need to be provided. Static can be a problem, but I minimize this by stirring my beans with a slightly damp spoon prior to pouring into the hopper. Tapping the back of the unit before removing the grounds bin will help most retained grounds fall out of the shute, as well. Overall, I’m very happy with the grinder and I use it every morning for single cup French press coffee (#28 grind) and for cold brew once in a while (#32).
700 microns for me is about a 14 on my encore. on the settings 4-5 setting i get about 300-400 microns, so that's espresso range. on 1-2 i get to turkish fine. maybe you should recalibrate your encore.
Great video , good to see a review of encore that’s Been owened for a long time. I’ve been getting sour flavours that I couldn’t dial out my coffee with using a encore so going to get the burrs replaced 😀

Good information, but you can’t say you dialed in a great brew and not drop the settings and bean type! You owe us a start to finish V60 pour over video. My burrs are a week old and I just brew an Ethiopian sun-dried natural @ # 11 22G & 400ml, which I sipped while watching your video.
Hey, the Baratza will do cold brew better and can do espresso with a work-around. The Sette 30 does great espresso but can't grind coarse enough for cold brew. The Sette 270 would be the best of both worlds.
I'm a barista. This grinder is meant for home brewing, a few cups a day. For a small cafe, if you're looking for a Baratza grinder for espresso and filter coffee, the Forte AP or BG would suit your needs. If you're doing filter coffee only, I'd recommend the Vario-W.
