Assuming they're all from that giant piece in the beginning, its a boneless pork loin ( not tenderloin, the part the pork chops are from )- so you're correct, as the babyback ribs are the bones that would be in the pork chops! PS this video made me go get a pork chop for lunch :d
I was wondering about the doneness of the pork but it looks done to me...more done than those eggs. I'd love a Po'boy sandwich with one of those chops...lettuce, tomato, pickled tomatoes and Duke's mayo.

The people who make these videos never heard of personal space. I mean the camera person is like right up on the person's I would be pissed if that was my kitchen where I was trying to cook let's see do you need a backup.

ミディアムで油から上げて予熱で火を通す。その際、脂身を下にするのは垂れた油で火が通りにくい脂身に火を通す為。これだけ厚みがあるとオーダーしてから20分くらいかかりそう。別に難しい仕事をしている訳ではないが、高級店だから出来る仕事。普通の食堂では20分も待たせたらお客が怒る。
否、豚肉はミディアム調理が不可、余熱に依る加熱も不可 食中毒の危険性が高く、そうした調理の仕方は殆どの飲食店では行われていない 厚生労働省の指導も有る(衛生管理基準に於いては75℃で一分間の加熱が必要とされているが、全ての菌が滅するわけではないらしい)
