    Lowering the temp makes life easier the temp of the stone and internal oven doesn't drop it just lowers the flame so your pizza does set on fire, having spend 2 days making dough, and hour prepping topping, 40 minutes heating the oven I can wait an extra 60 seconds for my pizza to cook.
    Anyone with an OONI will have there own methods of cooking successfully.

      i was making it on full heat... cooked in 10 sec, it burned from outside but inside was undercooked. next time i will try it on lower temperature xD

    Súper amigo , dos preguntas . 1 ¿ Cuánto tiempo lo dejaste calentar ? 2. ¿ Si se apaga cuánto tiempo tarda en bajar la temperatura ? Servra para negocio de pizza ?

      Dejé que se calentara hasta 800F. Utilice un termómetro infrarrojo.
      Se tarda unos 30 minutos en enfriar el horno después de apagarlo
      Esto es para el hogar, no para los negocios.

    Just use the small peel to rotate it instead of pulling the pizza out

      he said multiple times he did it to demonstrate how it's cooking and he normally just uses the small round peel to rotate it, jesus.

    I do not agree with your technique. A pizza is meant to be cooked fast at high heat! They don't turn the heat down in the pizza restaurants...the whole point of the ooni is to reach that high heat that makes great pizza.

      I'm right there with you. Managed a pizza kitchen when I was out of high school. We cranked the heat up to 550 and let it sit for ab 10 minutes. Granted this was a 5 foot wide oven, but still.

      You are clearly an expert. What is your technique for an Ooni pizza oven? Can you tell Ooni to revise the manual?

      The danger with such a small oven is it can quickly burn your pizza, you need to leave it for at least 30 seconds before you can turn due to the base still being soft so turning it down slightly does give you a few extra seconds. Your pizza will still cook in less than 2 minutes, the temp of the oven is the same it just lowers the flames so there is less chance of burning.

      Having burnt my first 3 pizzas on my new ooni doing exactly that, I can assure you that the heat needs to be turned down when cooking. As others having mentioned, the stone and oven remain at temp and your crust is kept from vaporizing. My 4th pizza was proof of that.

      You have to turn the heat down when your cooking or you’ll burn the top homie.

      Per the ooni manual, crank it up all the way to get it how, turn it down (not off) when you launch your pizza inside.
