Garlic= 600 gm
White Sesame Seeds= 200 gm
Poppy Seeds= 200 gm
Coriander Seeds= 1 kg
Asafoetida= 30 gm
Whole Kashmiri Red Chilly= 1 kg
Turmeric Powder= 3 tbsp
Curry Leaves= 200 gm
FOR THE SAMBAR:
To Pressure Cook the Dal:
Pigeon Peas Split= 1 kg
Water
Turmeric Powder= 1 tbsp
FOR THE TADKA:
Oil= 700 gm
Asafoetida Seeds= 1/2 tsp

I am from Andhra Pradesh… live in Tamil Nadu border… so I know from both states. What ingredients they use.. we use rice also.. but not coconut…
Because coconut garlic coriander poppy seeds gives taste of non-veg masala.. we never use jaggery

I am from Bangàlore, In our sambar we don't use khas khas, Til, Garlic, mustard etc. Our masala is different from your's. We don't keep fried masala just like that. We make sambar powder and keep. Will try this way also.

In Kerala sambar til, kuskus,and garlic are not added,atleast in central Kerala.
No where in south, these things added. and for the quantity of the sambar the masala taken was also bit less.

South Indian dishes me rarely gud dalte he, unless it's a sweet dish...
I guess the chef is from Saurashtra (Gujarat) where people use sugar more often than other parts of the country in any dish. I was done when he said to melt the jaggery and knew that it'll be used either for the masala or the sambhar... Please don't misguide and do fact check with some of your South Indian colleagues in the same hotel or field...
We do add little jaggery to balance out the tartness of the tamarind and other spices

Sambar is a Tamil dish. In any of the authentic veg dishes in TN or Kerala ,we don't put garlic . Because ancient times,we used to practice Jainism. If you notice the veg sadya in Kerala during Onam / Vishu, you won't be able to find garlic In any of the dishes. Some places people don't even put inion We use Mustard & Fenugreek only at the time of tadka. No jeera in authentic sambar masala. If any one wants to taste authentic sambar powder,try Achi,Brahmin, Samba powder ( these are popular brands in TN & Kerala) Karnataka sambar has different recipe. Their main ingredient is cinnamon)
If you are making with coconut, it should be fried to golden brown with coriander,chilly, curry leaves, asafoetida and grind and use Please don't complicate a simple,light, flavoured sambar into a complecated north or east Indian curry and even then ,dont call it sambar. We don't put anything which makes it sweet. Now a days people add sugar,,to make it a pan India dish
Sambhar is named after Sambhaji raje who was the son of Shivaji raje. He was fond of aamti which is a savory and sweet dish of dal . His cook wanted to make aamti but due to the lack of some spices he made it by adding vegetables, tamarind, and other ingredients and presented it to Sambhaji Raje. Sambhaji Raje liked it and asked for the name, the cook named it Sambhar. Thus sambhar came to our lives.

Saambaar is pronounced as "Saam_Baar" not as "Saam-Bur" The ingredients are absolutely Insane. We do not make it this way. This is crazy. However, north Indians like this Saam_Bur" only. They may not like our original "Saam_Baar" especially when you are used to this kind of crazy stuff .............................. OMG ....Absolutely Insane !!!!!!
Tamil sambar is unique and we like it. But, it's difficult to find, even in Chennai, different types of sambar available. I like the sambar served at Kurunchi Hotel. It's thick, tasty and excellent. But I miss thin, soupy sambar with drumstick, pamkin and other vegetables once we have at Bengal with repeated fill up.
bro im from Rajasthan and here we have a Dosa idli stall the owner is from tamil nadu and he makes the best sambhar i have ever tasted. A lot better than sarvana bhavan in delhi. The only reason is his sambhar is not sweet its tangy as hell and eating that with idli and vada is what i call heaven on earth

Actually, sambar is versatile. Different dhal or mix dhal can be used. Different vegetables and even potatoes can be used. To make the sambar powder or to add is optional depending on types of sambar. I prefer thick sambar with potatoes,carrots,beans,radish,drumstick and cauliflower. Here, the chef seems to be a bit heavy in using tamarind(too sour) fenugreek(too bitter) and jagerry(too sweet). And for me, it's a bit soupy too(too much water and less dhal for a huge pot of sambar). Too bad that the chef didn't add chopped fresh coriander and some ghee at the end. Anyway, it's just my view as Tamil-South dude.
One of the contain Versatility is true for all,as the preparations so is the taste, secondly tamarind is not only for sourness but scientific due to legumes, pump,tomatoes. Liquids for sip after each Idling or dosa, jaggery helps digestive system now taste n above all you can also upload if you can,we will taste that also😅👍

In South India SAMBAR is different ..actually v not use some ingredients in SAMBAR powder sir..South Indian SAMBAR is different..
This is North Indian version of sambar compared to South Indian one, and would taste different compared to South Indian one, nothing is right or wrong.

I don't know from which part of South India you come from! From your surname I guess you are from Kerala. Jaggery is ALWAYS added to balance the sourness of the tamarind. The quantity may differ. Udipi Sambar is sweet. Tamil Sambar is spur, Kerala Sambar has more Hing (asafoetida) but jaggery is a staple. The only things not added in authentic Sambar masalas is black Mustard and khus khus.
