Bash-Mash “Ezme”
Servings: 6-8
Difficulty: Easy
Prep time: 1 minute
Cooking time: 15 minutes
4 green pepper, roasted, or 2 bell peppers
5 tomatoes, roasted
1 onion, diced
½ bunch parsley, chopped
1 tablespoon red pepper paste
1 heaped tablespoon ground sumac
5 tablespoons of olive oil
1 pinch of salt
2 tablespoons of pomegranate sour, you can make your own bit.ly/3GItHAI or you can buy etsy.me/3odr4R8
- Fire roast all the peppers and tomatoes on “közmatik” (etsy.me/3KF6oJf). Otherwise, you can directly roast them on stove as well.
- After thoroughly roasted, place them in a bowl, close a lid for the hamam effect. It will ease to peel the skins. Peel all the vegetables.
- Add the roasted tomatoes and peppers, onions and parsley, pepper paste, sumac, olive oil, pomegranate sour and salt to a slightly high-bottomed plate that you will serve on and start to mash with a glass with sharp edges. A metal cup always safer than glass but both work great.
- Depend on your choice you can add some pomegranate seeds and olive oil on top. Ezme is a beauty by itself but also a great side dish for köfte, kebap or hot dogs! - Zábava
Refika, our Mexican culture has Pico de Gallo which is almost like your recipe. Instead of parsley we use cilantro, we slice and dice tomatoes, onions, serrano peppers, the cilantro, squeeze lime juice, salt and pepper to taste and ARRIBA! In our grilled meats, tacos, gorditas, beans rice etc. I'm glad y'all are safe. From Texas, a 5th generation TexMex, hasta la vista.😊
we love mexicans here in turkey very much.
Laura I immediately thought Mexican when Refika started grilling her vegetables. I love Mexican cuisine also, both it and Turkish food both have such a wonderful array of fresh produce you can't help but eat well.
Wonderful. I really enjoy all your videos.
😃😃thus is the Turkish version of our Bihari CHOKHA... I am from Bharat that is India
So ...can I send u my address ...for ur hand made pica de Galio...
Refîka as a Turkish woman who lives in Ireland for 4 years whenever I feel homesick I always watch your recipes and try to make them . I love your enthusiasm that you bring in this cooking field . I also love how creative you’ve been always. As a Turkish woman I’m so proud of you .
It’s always lovely to watch your channel .
Loves and kisses , Merve
I so appreciate your recipes for basics like tahini, pepper pastes and so on. I live in Alaska, where such prepared ingredients are rare or not available. My hummus is now famous! I always tell people to subscribe to your channel!!
Ooooo thank u thank u 😘 to Alaska
Thank you Refika , your recepies are awesome!!
I make Simits every week since I first sow your video , also the tomatoes and olives for Turkish breakfast, love it!!!! Thank you !🇺🇸🇺🇸🇺🇸🇺🇸🇺🇸🇺🇸🇺🇸🇮🇱🇮🇱🇮🇱🇮🇱🇮🇱
😘
I was in the international ingredients aisle at the grocery looking for coconut cream and I saw jars of sumac and nearly screamed! Yes, I now own sumac 😊 and the aroma is something I can’t quite describe - so tangy and acidic - and have been enjoying it on my toasted bagels so far and have a few tablespoons infusing in some olive oil for a salad drizzle.
I’ll be trying this recipe when the garden has gifted me with fresh tomatoes. It looks delicious as always.
🇨🇦❤️
Tell us how it turns out when you try ❤️
Do you know sumac is good for your blood cells, specifically for those with Anemia..😊
Sumach is staple spice in Azerbaijan. Fantastic powder.

I love your food -- but not just your food! Your enthusiasm is enormous and contagious. Also, you never pretend that it's just you by yourself... It's great to see how well you interact with your team. ❤
I found a Turkish restaurant in my area of California yesterday. Sadly, there aren't very many. Thanks to your videos I can pronounce the names of the items correctly and know what goes into making them. No guessing!
Thank you for another wonderful recipe! You and your team are a gift. I learned how to cook and love food from you!
Refika, whatever you introduce me to, I cannot do other than click and watch in awe like a 5 year old kid at x-mas. Your way of showing is teaching without teaching - full of love and care! Again another brillant recipe which I am thankful for - as if I would know you for 10000 years!
Thank you for being, dear! Thank you for showing your heart's following! With love from Hungary
Bizden de Macaristan'a sevgiler. Kardeş ülkemiz. 🤗💖
I taught my English chef friends ezme and they love it. They also love pul biber, biber salcasi and they incorporate these in their cooking.
Wonderful recipe! A Turkish restaurant near me serves this as an appetizer, and it's one of the most delicious dishes I've ever had. Thank you for the recipe.
You're welcome, enjoy!! ❤
Love how you stick to traditional way of making this meal 🥰 I am sure it is more delicious as you put your time and energy in it! 🇷🇸 ❤ 🇹🇷
I personally believe that you should preserve and embrace your traditions while building future ❤️ and yes that energy makes it even more delicious
I believe that it's likely much tastier made the traditional way as you are not only chopping the ingredients, but mashing the flavours together at the same time.
You always have the best LIGHTING & WINDOW background!!!☀️☀️☀️
Please never change it.❤️🙏
I am in love with it too... ❤
Love learning Traditional Methods of preparation. Have a brilliant day❤
Esme! Such a wonderful and practical side dish, appetizer and the ingredients are so yummy .Thanks for this recipe Refika! Health to your hands and greetings 😘👏👏👏😋😋😋🌷🇲🇹
Thanks for your comment beautiful heart ❤️
Beautiful! I bet I am not the only one who would love to be there with you sampling this lovely dish!! Have a wonderful day, Refika! Love to your friends as well... always enjoy your videos! Blessings!!!❤
Thank uu thank uuu 😘😘😘
Thank you for increasing our cultural knowledge and repertoire of tasty foods 🙏🏽
Love how simple this is.
This was incredibly simple and looks delicious. Reminds me of tapas. Here in California we have pomegranate molasses. It’s delicious when I’ve used it with tahini. I can’t wait to try this out soon. Thank you Rafika and team!
With love! ❤
You had me at sumac. A favorite spice! I even learned to prepare my own some years ago. The species of tree needed matures well in the Seattle area. And pomegranate.such a wonderful taste. BTW, for those who have them, i find a large metate is perfect for the "pasting" process. Or even a large surabachi. As I am a potter, it is easy to make on a wheel, and so useful for both wet and dry grinding.
💜💜💜
I love learning techniques and there are two today: the way to take the skins off roasted peppers and the way to chop veggies together with the edge of a glass - fantastic! Thank you :)
Enjoy!! ❤️
Love it, Refika you said, “this is really vegan proudly vegan it is vegan in its original state” as a child who grew up by the Aegean Sea I had no idea how many days out of a week we ate vegan; so delicious and as it is supposed to be… visitors from USA arrive they ask where the rest of the food is, this is all and amazing! We do eat meat but meat is the side vegetables are the main
This dish is a gem of the Turkish cooking. And this cutting technique is quite a fun 🙂
This recipe looks very easy and delicious it is making my mouth water. Yes you have done another great video and share much with us. Thank you and much blessings and peace to you.🐞🦬🐢❤️
I love that roasting plate. I wish I could just transport myself into your kitchen and eat your gorgeous food, Refika! And I love to hear Bahar and other’s comments from behind the scenes.
❤️❤️❤️❤️ LOVE YOU ❤️❤️❤️❤️
Mmmmmmmmmmm! Thank you for sharing! Substitute Cilantro for parsley, add a pinch of cumin, and you have South American salsa! Wonderful!
Enjoyyy!!! ❤️
Love you Refika, you are the most influential cheff in the way I cook. ❤
Hey Andrés, thank you for your kind words... all my love! ❤
I adore ezme!!!
Ευχαριστώ πολύ refika!!!
I have an Alaskan knife called an ulu. It is curved on the cutting edge and has a handle opposite the cutting edge. It came with a bowl cutting board so things don’t roll away when you are rocking the knife back and forth while cutting. I think it would work very well for this dish. I will try it when my tomatoes and peppers start coming on.
Yes. Actually Turkish cooks of kebab restaurants use a similar knife(almost same) for that process.
Dear Refika Team, thank you for inspiring us with your great recipes!
Oh my goodness….your ezme-recipe is absolutely mouthwatering❤️❤️
Thank you Refika. I really appreciate when you share vegan recipes.
This looks wonderful. I Think I’d really like EZME.
Looks good. A must try when the veg are in season!
Thank you so much I really love watching you and your husband very interested in cooking your culture food ❤️
Thanks! ❤️
@@Refika thank y’all for making my day better
Oh my, looks sooo good!! Love the idea of using a metal cup... It's the texture that will change if you use a knife or a blender. Time to find me a pomegranate!
Tell me how you like it ❤️
I love your silver tray 😍 Where can we find it?
Such a wonderful idea to use as a "side" for our entertaining! Thank you for the continued culinary inspirations
You're always welcome, all my love! ️❤️
Definitely going to try this amazing dish. Thank you.
Looks fabulous!
Thanks for the naturally Vegan recipe, Refika! Love the technique of using the rim of the glass instead of a knife or blender!
I love ezme! So much flavour!
Looking forward to trying this, looks delicious. Thanks
Another great suggestion. Wonderful. Thanks 😁👏👏👏
This looks great for eating outside for dipping or spread.😊
This looks delicious, thank you!
I think a potato masher would do the same job no? Looks delicious! I make something similar with garlic & basil, but this one has added oomph! Thanks for sharing!❤
You definitely should try this one too.... ❤
@@Refika indeed I will! You made me fall in love with Turkish cooking! Especially since I am (almost) a vegetarian, there is a massive choice of delicious food on your videos! Thank you so much!
Thanks for this recipe Refika. I love dips and this will go very well with my kafta and also toasted flatbread. Would also try it as a sauce for my rice. Will be a part of my Eid menu
It really is... ❤ enjoy!
Another great recipe, yum
Another one for the algorithm 😂. Delicious 👌🏻💋

Looks absolutely delicious and refreshing I love your videos and team ❤
I love that you show the traditional way of making this recipe. ❤ Blenders are too easy, I'm sure you can taste the extra care and attention of the tray method.
I have sumac AND I'm vegetarian, so trying this is a "must". Thank you 🙏
You make such beautiful food!
Been waiting for this ever since my honeymoon in Turkey. My favourite mezze!
Wow that looks delicious and amazing can't wait to try it. Thank you for sharing your recipes😊
Thank you Refika for your wonderful recipes! My wife and I look forward to every Saturday to see what you come up with next ❤
My pleasure dear ❤️ all my love!
Thank you Refika, looks delicious and I'm going to make it this weekend. My son's girlfriend is vegan and this will go down a treat.
Delicious 😊 I'm going to make this. Thank you Refika!❤🙏
Delicious!✨ I will definitely try this.
Looks delish I love the traditional method. Using what people had handy to mix with.
Continued love and prayers for the People of Turkey. We have not forgotten your hardships.
Thanks thats one of my favorite sides. The recipe is easy to follow. And i agree some recipes are better in traditional mortar pestle, as modern blender dont smash the ingredients the same way and both taste very different.
What fun it is to watch your videos of Turkish cooking. I hate writing comments but love your videos.
Thanks for sharing this with us Refika 🙏🏿, This recipe is the easiest of all your recipes for me and this is probably b'cos we have the same with peppers, tomatoes, onions, parsley..... but with different spices added. We also add dry or boiled shredded maquereaux fish, shrimps & periwinkles. We eat this with bread, rice, boiled or fried sweet or Irish potatoes....... I would ❤️ to have a taste of yours with different spices from the one I'm used to. It will surely taste😋😋 divinely great 👍. Thanks again for sharing this with us 🙏🏿🤗.
Remain blessed as always and lots of love❤️❤️❤️❤️ to you all.
Glad you love it ! Yours sounds so delicious too 😍 all my love!
This looks amazing and simple!!
This looks soooo tasty! I'm eating a shawarma right now and could have used some ezme for a starter ❤
