Gate ki sabji is a delicious and popular Rajasthani dish made with besan (gram flour) dumplings called gatta. It is a flavorful and satisfying dish that can be enjoyed with chapatis or rice for lunch or dinner. The dish is known for its rich and aromatic spices that give it a unique taste. In this recipe, we will learn how to prepare gate ki sabji using simple ingredients and an easy cooking process.
    Nutritional Value:
Besan (gram flour) is a good source of protein, dietary fiber, and minerals like iron and magnesium.
The spices used in the recipe, such as turmeric, coriander powder, and red chilli powder, provide various health benefits due to their antioxidant and anti-inflammatory properties.
Ghee, a clarified butter used for seasoning, adds richness to the dish and provides essential fatty acids.
    Ingredients for Besan Dumplings (Gatta):
    1.5 cups besan (gram flour)
4 tbsp oil (any cooking oil)
1 tsp ajwain or carom seeds
    2 tsp red chilli powder
    ¼ tsp hing (asafetida)
1 tsp amchur (dry mango powder)
    1 tsp salt
    1 finely chopped green chilli
    ¼ cup chopped coriander leaves
    Ingredients for Gatta Spices:
    ½ tsp salt
    ½ tsp turmeric
    ½ tsp coriander powder
    ½ tsp red chilli powder
2 tsp dried mango powder (amchur)
    Tips:
Be cautious while adding water to the besan dough, as too much water can make the dumplings soft and difficult to handle.
Save the water used for boiling the dumplings as it adds flavor to the gravy.
Adjust the spice levels according to your preference by adding more or less red chilli powder.
To enhance the color of the sabji, you can add a pinch of turmeric powder during seasoning.
