I am a new subscriber. My husband of 30 years passed 6 months ago and I’m trying to learn about meat. He was the beef cutter and grilled so I’m truly a novice lol. Ty for your great video

When peeling skin apply pressure from opposite side slide knife through tilt blade slightly upwards and move the blade back and for till knife is at the skin layer only then slide knife across the length of the meat. This will help to cut less meat off when skinning

She cuts too much meat off
Tenderloin requires you to butcher a lot of the silver skin and excess fat off, some of the meat will sadly stay attached to it.
This could’ve and should’ve been a 5 minute video eff me
