I work in a bakery and hairnets are a must, we even have beard nets if necessary but gloves aren’t an issue when working with doughs tbh, everyone washes their hands every so often and gloves are only permitted if working with something hot like the reel oven or for frying off doughnuts

My mother used to make gorgeous cakes. She made an 8 tier anniversary cake once in pink white and silver, with spun sugar netting. I was a kid back then. I'm 70 now, so that was a LONG time ago, but I never forgot it. Also made a baby shower cake with a cake cradle, Tiny Tears baby and the cake rocked (my dad did that for her).
You know I thought this was like the ultimate bakery and all of there items would be the best of the best but since they have opened one of the bakery’s in my mall I now know that their items are highly overrated they taste bland and some of their cookies were dry. Don’t even get me started on the price ughh so expensive for no reason I believe 1 cannoli was almost six dollars ridiculous

The risk of food-borne illnesses is minimal to begin with and bakers need to use ungloved, but washed (which are not aseptic, but usually pretty well disinfected) hands for dough work. Granted, there are definitely points when not working with dough when they should be wearing gloves. But when working with dough, gloved hands are worthless.
