    Ingredients:
    Pecan-Honey financier:
    140g Butter
    170g Powdered sugar
    80g Flour
    1/2 teaspoon Baking powder
    1/2 teaspoon Cinnamon
    1/3 teaspoon Cloves
    120g Ground pecans
    Pinch salt
    5 egg whites
    40 grams Honey
    Mascarpone Mouse:
    3 teaspoons (11g) Gelatin
    5 egg yolks
    80g Sugar
    40ml Water
    40g Honey
    2 cups (450g) Mascarpone, room temperature
    1 teaspoon Vanilla bean pure
    450ml Heavy cream
    Honey Jelly:
    2 teaspoons (7g) Gelatin + 40ml
    3/4 cup (180ml) Water
    35g Sugar
    100g Honey
    Almond-honey Florentines:
    50g Butter
    40ml heavy cream
    65g sugar
    35g Honey
    50g sliced almonds
    Pinch salt
    For the bees:
    Marzipan
    10g Melted chocolate

    Just had a thought. For food safety, you could put a glass inside the bowl on the left when breaking the eggs. Put the good yokes in the glass, but if any eggs have blood spots (a sign the egg was fertilized, ergo, it's now potentially dangerous to use), you can put their entire contents in the bowl below the glass, replace them with good eggs, and keep going. Or, you could just put the glass next to the two bowls (less messy that way). In any case, you need somewhere to put any bad eggs that you open, and should really break them when they're not over the bowl on the right with the egg whites in it.
    Also, never use hand-mixing beaters in a glass bowl, and it's really not wise to add boiling hot liquids into glass bowls, even in small streams, as even tempered bowls can crack (been there, done that myself). Stand-alone mixers are ok with the bowls they came with (glass or otherwise) because the beaters are stationary and won't bump the sides by accident, as happens often with hand-mixer beaters.
    Only use food-grade plastics when cooking. That bubble wrap is not food-grade if it was meant for packing. It'll have everything from toxins/toxic gasses to microscopic manufacturing debris (everything from chemicals to fiberglass or even asbestos) that it will pass into the foods it touches. Washing helps, but doesn't fix these things 100%. If you know of a food-grade bubble-wrap, that will solve the problem, but the video needs to state that it's food-grade, to encourage people to learn the difference and act accordingly.
    The other thing you could try is just using real honey-comb (if you can procure it). People eat off of honeycomb all the time (beware that this can contain bacteria and cause illnesses, and also never give real honey to anyone under the age of 1 year old). Replacing it is a good approach, but again, the plastic needs to be food-grade.
    Never, ever use a glass-anything as a rolling pin. Just use a real rolling pin, or at least a washed, unopened canned food item. I keep a can of pumpkin in the kitchen for this and other utilitarian cooking purposes, as needed.

      Technically, you can, but I would not recommend using different spices, especially not cocoa power, as the flavor combinations are not working together, in my opinion.

      You can convert grams to cups on google

      1. In some recipes you can't use cups, you must use grams because you must be precise. Use a scale, it makes baking much easier.
      2. If you insist, you can easily convert to cups. But it will not be precise, as some amounts are not round.
      3. 99% of my recipes are both, in cups and grams.
