    My kefir is no longer producing whey on the 2nd fermentation cycle, like really none. They used to! :-( If you guys have any thoughts I would appreciate it. I have been using raw milk this whole time and they have say on a table fermenting in the same location since I started a week ago.

    Kefir is high in histamine because it ferments.
    But raw milk is a histamine inhibitor.
    I wonder how raw milk kefir rates in terms of histamines… do you think it increases histamine or lowers it?

      +tabletop581 Fermented foods in general are high in histamines. So raw milk kefir will be high in histamines but probably lower than pasteurized milk kefir. When I cut out flour and sugar, I can handle fermented foods, because flour and sugar are very acid-producing foods for me.

      +J Rad Man The best way is from local farmers. Some stores sell it, but I don't think it's safe; it doesn't last long when it's not pasteurized, so your best bet is to get it fresh from a local farmer, make sure the cows are grass-fed and healthy, then either drink it while it's fresh (first day) or make cheese or kefir.

      @Charlie Ennis I use raw milk too. I notice too governments tell us raw is bad and that's deliberate because they know healthier. They put so much chemicals in milk now its actually harming us my friend told me that works processing milk factory stay well clear.

    My raw milk goes sour too quickly. Can I buy raw milk, put the kefir in it, leave it for 6-24 hours, and then put the whole lot in the fridge and drink it over a few weeks? Shouldnt it be ok, like yogurt?

      +Marius Draconis that's too bad! My raw milk lasts weeks in the fridge. It only gets better tasting, kinda sweet, with time.

      why? i have many friends who drink raw milk from the farm and are into making kefir...when i started i asked my farmer too for the grains. and i am going to give them to my friend when they grow

      I think its a nice idea to give away excess high quality kefir grains. Some of the commercially sold kefir grains aren't as high quality as some of the ones that are made by locals with pasture-raised raw milk. With that in mind, the commercially sold ones are over-priced for less quality - which is a rip off.

      Obviously pepelota doesn't make kefir or he would know that the grains multiply enormously and you couldn't possibly use them all, so they are given away to start someone else on the road to a healthy body. Is 't that a neat idea.
