I have grown up on a sheep farm but has actually never tried to shear them. My mother was the one shearing them 2 times a year, and took pride in beeing carefull and not hurting them.
One nice thing with sheep is that they're usually very docile if you're calm in body and mind around them. If you talk to them from they're young, talking in a calm voice can help sooth them. They're almost as aware of peoples mood as dogs are.
I remember many sheep would not let me pet them if I was in a bad mood.
I have tried holding a sheep in a sitting position only a few times, and it is indeed not easy. Not only the grip, but also the angle. If it leans to far back it will panick, and to far forward and it will try to escape.
It's also a matter of trust as with many pet animals, if the sheep know you or you communicate that you are trustworthy they're much easier to work with in every way. For my mother to keep a sheep it had come home voluntary when calling for them.
One important thing that is different from pets like dogs and cats when handling sheep is how much pain they tolerate. If you are calm you will not scare them if you hurt them, and that is not a very good thing in many ways.
We had sheep die when helping them birth without a sound or a flinch.
One time a sheep by accident broke her foot in a lift when my father was cutting the hoofs(clefts?). Again without a sound or a flinch.
If you ever hear a sheep cry out in pain it's hurting very very bad, and in all the years I think I've heard a sheep cry out in pain only a couple of times.
Where I live fortunately it has become more common to give paracetamol to sheep when they're sick.
    I miss sheep ❤

I think they are the same in that if you do either long enough, you're going to be carrying injuries......

Just for reference, Jiu-jitsu is not really Japanese for anything. The original Jūjutsu does mean that. Jiu-jitsu is really just the name of the Gracie/Maeda technique
