Looks like your "fish man" does a great job of cleaning the carp! Looks like he removed the bloodline for you as well! Very nice. I have been eating carp ribs for 40 years at least! At several different occasions, not continually for the last 40 years, that would have made even carp extinct!

Down here in the South we do something similar. It also works real well with larger catfish. What we do is steak 'em. That means takin' out the guts, clippin' off the fins, cutting off the head, removing the scales, if it's a Buffalo (not required for a catfish, of course) and then you take a big meat cleaver or machete and chop across the fish every 1 1/2 inches down the spine. You end up with a piece of fish that looks like a "U" and it's basically the back of the fish with a few ribs on each side. You cook it up from that point just like the Buffalo ribs. Doesn't work with small fish or fish that have tiny bones, but is great with your bigger fish. It seems pretty common when grilling with salt water fish like salmon, swordfish and shark, but not everyone knows that it works with large freshwater fish and fryin' in deep fat. Try it!
One of my favorite fish, our lakes here in East st.Louis, frank holten park has them, can be a challenge catching them, also in the Mississippi river. I keep some in my freezer

South Carolina is missing out on some good eating. Most African American owned catfish restaurants here in Arkansas where I live serve both buffalo and catfish. Top it with some hot sauce or either mustard and hot sauce, it's really good.
