    Fun fact: most pies made in the medieval times were not made for the pie crust to be eaten (even for nobles) in fact the pie crust didn’t even have butter so it was dry and hard as wood and was really just used as protective layer so you can just throw the pie into a sack and go. It was pretty much a bowl made out of flour.

      If I remember correctly, the first thing resembling modern pizza was that crust. After their meal the nobles would spread some sauce and leftovers over the crust and feed it to the their servants or something like that

    I really like you not only as a cook, but as a youtuber. Your voice is calm and comforting, you're funny without being over the top and you take these recreations seriously (many youtubers seems to be more focused on being funny) and genuinely try to make them work.       the dothrakis are based on the huns and central asian turco-mongol tribes, and idk about the rest but the mongols did have heavy cream, they had almost every dairy product you can think of, they left milk out in the sun and the cream would seperate on top, mongolian nomads still have this tradition

      Idk. You're assuming that the people who know this channel will happen to travel to where his restaurant is at. Also, most restaurants rely on repeat customers for financial purposes. Planet Hollywood is still going strong because it placed in central tourist locations and people will go there just because of the name.

    I noticed there are different types of lemon cakes throughout the show. The one she had at the Eyrie I think looks a lot dense and sticky, reminds me of a sticky pudding or butter cake. Nevertheless, that version looks the tastiest!

    About the lemon cake, instead of baking it in a tray, try baking it in a cake tin that is long and taller. Then instead of cutting circular pieces and wasting the leftover cake, just cut slices . Depending on the tin you cook it in, they can be really circular with much less waste.

    For the lemon cakes, I personally find they work better if you place a slice of candied lemon on the bottom of a pre-greased ramekin, put the batter over top and cook in the oven. It comes out more solid and shapely and the baked lemon slice cuts the excessive sweetness

    Hey! I made your lemon cakes and curd and they were amazing! However, I whipped the egg whites and they turned out super fluffy! I did this mainly because I live in Florida, where cakes are never light and airy enough, which means that sponge cake is harder to make. Since I didn't want to do more measuring for altitude, I found that adding a meringue helps!

    Theres an old polish story I remember that when suitors were courting a noblewoman the cooks would make a sort of black pudding. The father would take a portion aside to prepare himself to be as disgusting as possible, mixing ashes and cinders in, burning it, and adding a ton of salt. Basically render it inedible.
    The winning suitor enjoyed a fine dining (for the times) experience with his new fiance and future in laws. The rejected suitor was seated at the farthest end of the long table and expected to watch while eating his ruined dish in its entirety without complaint. Ya know. Cuz getting rejected wasn't cruel enough they had to rub it in with an incredibly blunt metaphor.

    Basil is one of my favorite herbs for rabbit. Especially for frying the livers (I put it in the dredging flour along with salt, pepper and garlic powder).

      I nearly always cook rabbit with lots of garlic, rosemary and white wine.
      Thyme is used by some people too, sage maybe good with it too if used combined with other herbs, oh and parsley, parsley goes with anything

      Well in philippines there is a related delicacy here and its pretty common. Its like treated as everyday lunch or whatever. We call it "Dinuguan" which is pigs blood as soup with a few vegetables here and there
