I liked the old show The Fall Guy. But to answer why don't we know more about the stunt men is because movies used to be about the magic of film. Taking you to another place for a bit.
People didn't know about the personal lives of actors. Actors were larger than real life.
Now everything is in the open.
People want to know how a magician does the trick.
Also, stunt men are a close knit family which is hard to get into. That's also why we didn't know alot about individual stunt men and women.
