It's a village recipe very easy to bake and above all, very tasty! If
you enjoy baking you will not be disappointed!! I hope you'll like it as much as I have! Find recipe bellow...
INGREDIENTS - GREEK AND CYPRIOT VILLAGE BREAD
“KOULOURI DAKTYLA”
For the dough
4 glasses strong white bread flour
2 1/2 glasses plain flour
14g dried yeast
3/4 glass olive oil
5 grains of Mehlepi, pounded
5 grains of Mastic, pounded
1 teaspoon sugar (for pounding the two grains together)
1/2 teaspoon baking powder
Pinch of salt
2 cups lukewarm milk
For glazing
1 egg yolk beaten lightly with,
2 tablespoons of milk
3/4 glass Sesame seeds
ΣΥΣΤΑΤΙΚΑ - χωριάτικο ψωμί
"ΚΟΥΛΟΥΡΗ DAKTYLA"
Για τη ζύμη
4 ποτήρια ισχυρή άσπρο αλεύρι ψωμί
2 1/2 ποτήρια αλεύρι
14g ξηρή μαγιά
3/4 ποτήρι ελαιόλαδο
5 κόκκους Mehlepi, σφυροκόπησε
5 κόκκους μαστίχα, σφυροκόπησε
1 κουταλάκι ζάχαρη (για να χτυπάει τα δύο κόκκους μαζί)
1/2 κουταλάκι του γλυκού μπέικιν πάουντερ
Πρέζα αλάτι
2 φλιτζάνια χλιαρό γάλα
1 κρόκο αυγού χτυπημένο ελαφρά με,
2 κουταλιές της σούπας γάλα
3/4 ποτήριού σπόρους σουσαμιού

Thank you for making this channel, Stavros. I was born in London to a Greek Cypriot mother and when I was young she used to cook her mother's recipes for us and taught me how to make a few. Unfortunately she became bedbound when I was a teenager and so it's been a long time since she's been able to cook those things. A few years ago I lived in Cyprus for a few months and was able to reconnect with my roots. I've really been missing the food and your channel makes me feel so nostalgic. I really need to make these things so that my husband can taste more Cypriot foods 😁. Sorry for writing so much, I had an emotional response to your channel 😂. Have a good day Stavros!

Stavros Antoniou You are so right about the culture. As religion goes. There are alot of Catholic Churches located around here in Istanbul. And lots of Mosques. The ones with pointy towers 😂
But mostly Muslim. I have been here for a year now in Istanbul. Love the people and culture. And it's going to be Ramadan again. Smiling. A time for giving
I love Greek food. That bread certainly looks delicious. I am thinking now. Could I use this same formula to make pizza bases? It would certainly taste different. 😊🍕🍞
Hi Darren, I haven't been very sociable these last few days. It has been extremely very hot. Very unusual weather. It makes you very tired, can't even do the gardening it's so hot, never mind about anything else! I do have a recipe for pizza base, the dough is slightly different to the bread recipe. DEAR STAVROS, take FRESH LEMON JUICE, pure or mix it with water and drink at least half of a lemon every day !!!! right now, with your sore throat, drink it pure without water !!! it will make the sore throat disappear fast !!!! LEMON is wonderful !!!!! You probably do not wear warm enough clothes.... I protect myself quite well with several T-Shirts, turtle neck sweaters.... I may look fat in them but I don't catch colds !!! I cover my head sinuses with a turban !!!! I can't imagine you with a turban, but there are these "bonnets" for men or women.... or a vest with a hood....

The last few days it has been freezing here in London. Next week we are flying to Cyprus to visit my elderly mother. I hope we'll be okay by then. Very dangerous For an old person. Hello stavros, is this bread different to boxamadi bread? It looks the same but I didn't know that boxamadi had mehlebi and mastic in? Can't wait to try making this anyway! xx

Dear Loulla. Thank you very much for the nice comment...Sorry for the long silence. I have been trying to shake off my horrible cold! It comes and goes. Anyway here we are at last. I have never heard of boxamadi bread... maybe in different regions they do bake boxamadi bread... I know koulouri boxamadi, which is baked in the oven until it becomes very solid and hard. Is crunchy when you bite into it. It's a kind of biscuit people dunk in their tea... I hope I have been of some help to you. On the other hand I could be wrong all together. All the best for now. Hi Chris, The temperature is for fan assisted oven. Sorry I should have stated
that in the video! All my recipes are fan assisted oven! Don't forget Chris, to allow the dough to rest and rise double the size, even after you have shaped the daktyla and placed in the baking tray!! You too have a Great weekend! :-)

Hi Zara, The glass that I use equals 150 grams of flour, the same as a cup. Allow the dough to rest and double in size, before cooking in the oven! I hope I have been of some help to you.... Have a nice day!

You are welcome dear Zara! You are right! The mehlepi and mastic, that's what gives the bread it's unique flavour and aroma! By the way. Use the same glass or cup for all the ingredients, liquids or dried.....
