- Decided to have a bake off! Tell me which cookies look better in the comments!
Cookie Recipe:
1/4 cup melted and cooled coconut oil
1/3 cup pumpkin puree
1/4 cup coconut sugar
1 tbs maple syrup
1 egg / egg substitute* your preference
1 tsp vanilla extract
1 1/2 cups packed fine almond flour
3 tbs coconut flour
1/4 tsp baking soda
1 tbs pumpkin pie spice
1/4 tsp salt
Frosting:
1/2 cup powdered sugar
1 tbs maple syrup
1/2 tbs almond milk
*I always make extra of this cause it's the best part

Please don’t give those to anyone who is vegan. It sucks to be that person asking what the ingredients are when someone offers something vegan, so you trust them but in this case would end up eating eggs 😝

When making cookies/cakes/ pancakes you could substitute the egg for a mixture of chia seeds and water (1 tbsp and 2.5 tbsp, respectively) to make it vegan. It’s weird but works😂

hi ashley! those cookies look good but just wanted to let you know that those wouldn’t be considered vegan since there is an egg in it, vegan is nothing darkly or meat related. my sister is vegan

Looks yum but for it to be vegan you can substitute the egg for a flax egg.

Omg people read the description! She states that you can use an egg substitute in the recipe. Maybe she just didn’t want to make these specific cookies vegan but normally the recipe can be vegan 😅 the amount of “these aren’t vegan cookies” comments when she puts in the description the egg substitute as an option 🤦🏼♀️
