Thank God you cut the breasts like that. Everyone does individual shavings, but that's the worst balance of skin to meat, the worst balance of portion sizes, and the least tender way to cut it. You want to cut it all off in one big piece like in the video, then do cross cuts about 1-2cm thick to make the pieces be the most tender (cutting across the grain instead of with the grain of the meat makes an unbelievable difference and you did good in the video)
I have a question do American left that much meat on the bone? Do you guy use those bone every single time to make other dish or just throw them away sometimes? Because from where I'm from not even the cartilage go to waste. We eat everything except the hard uneatable bone. The white soft and crunchy bone in the middle of the breasts is my favorite.
bruh. i am an Indian and the turkey looks balantly dull in terms of spices to me actually. here, the spices are made to go inside the 'meaty area', making sure every bite is spicy. no need for sauce.

Lil add on: save the carcass and bones for stock :) low in a crackpot for bout 10-12 hours or on the stove for 2-4 hours
