    He's pointed out the biggest mistake most people make with salmon. They cook it. LOL. I just put some Gravlax in the fridge today before seeing this. Now I have to go back to the store and buy more salmon to try this.

    Yes, I did "eye-ball" his recipe and it turned out fantastic! I watched this video multiple times checking out the size of measuring spoons he used. After mixing the ingredients I tasted it and fined tuned it to my palate. I've watched Jacques Pepin since his debut with KQED. My Mom bought me one of his first recipe books. Love Pepin's recipes and cooking techniques. I've followed him throughout my adult cooking life. Hope you try his recipes too. :D

    Yesterday I made Gravlax, today tried making Pepin's Cured Salmon in Molasses, and they are both in the fridge. Never had Pepin's so looking forward to tasting it in couple of days. My husband got a hold of freshly caught Pacific King Salmon couple of days ago so that's the lovely fish used for this recipe. :D

    I've done this many times. only use 1/8 teaspoon cumin and 1/4 cup salt. We always use Alaskan or Scottish salmon, it is fantastic!

    This is a wonderful recipe, I have done it several times and it always worked beautifully. The combination of spices doesn’t have to be that accurate. What I think is most important is to have a good and fatty salmon, like Pacific salmon, Rather than the very lean salmon, like Coho, for example.

    The recipe says to do dry rub for 24 hrs, then add wet ingredients for another 24 hrs then the final unwrapped salmon for 24 hrs
