Do you move the pedals forward when shifting, or backwards or not at all? I have a 7 speed and I always feel like the chin is going to fly off
Move it forward.
So on a level road you should have your rear gear in on a smaller gear and front gear on a bigger gear but going uphill you should do the opposite and have you rear gear on the bigger gear and your front on the smaller gear? I haven't ridden a bike in around 15yrs and the last bike I had only had the rear gears but I picked up one that has both front and rear and I have no clue what the front gears are for or how to use them!

No bro it is completely normal as there are different bikes in different countries and I can tell this because my bike has 6 gears in the back.

Imagine some rich person seeing their friends with fancy new bikes and they go and get the thousand dollar bicycle as their first bike. They might need a beginner tutorial. You never know who has what knowledge, assumptions often have exceptions
