    Started our business 2 years ago.. - Tasty WAVEZ Italian Ice- with a raggedy old trailer. Now we have a store front and looking to open a second location. Still learning how to run it more efficiently everyday. My piece of advice is JUST SHOW UP. Some days are good, some days are bad. But it's all a part of the learning process. Also, try to stay consistent with your hours ,product/service.

      I don't think he was doing it intentionally. As a journalist sometimes I forgot that I am on-camera or interviewing people. Sometimes the conversation is so good or your interested in many different questions that you tend to over talk to get to the next question. Be nice Henry!

    I own and operate a food truck for over 5 years now and have built out 3 total. Literally everything this guy is saying is accurate. My biggest concern he didn’t address I can’t stress enough is don’t have debt. If you can’t buy a truck cash don’t buy it. There’s a big likely hood you’ll fail

      I have a question. I'm researching food trucks with the possibility of having my own in the state of Utah. I'm reading that most food trucks must use a commissary kitchen for food preparation. However, I've seen lots of trucks that prepare and cook on the truck itself. What is the scoop please?

      The Greek Physik clearly your not business minded , once you get through first year or two, your over heads come down, your knows and experience grow along with profits, put in time marketing and development for max potential.
      I wish I had 50k to have the freedom to work for myself and be in charge of my own destiny, I’ve worked in a variety of sales roles making cash for others, eg growing an account base of £100k to over £1.6m for next man over 8 years , I won’t say I didn’t earn well with the bonuses but I left the business in a great position, if that was my business where I would be now ?

    I've been in this business since 1979-this is the most realistic video I've seen on the topic. At least this guy knows the difference between our business and a restaurant. It's not easy, that's for sure, but it sure beats working for somebody else.

    I first learned of the business when my dad told me a lot of mafias have them😂 I thought if they are doing it, it’s got to be good money. I pondered on the idea and then thought this is for sure the path I want. I’m only 17 but one day I will own my own. Here in Estonia there is no decent food trucks at all and I think that is opportunity, I wish all of yall planning this the best of luck

      @@MrPland1992 I saved all my money during my first 2 years in the Army and asked for money from family and friends. My last two years i used my military check and profits from my food truck to pay myself and everyone back. I had the food truck running while in service.

    So many food businesses I work with have added mobile trucks to their business because there are less start-up costs and more flexibility. I've even seen people turn their bikes into food trucks!

      I offer 3 types of hot dogs, Nathans all beef dogs, Nathans regular dogs (chicken/pork mix), and Brightleaf's Carolina Reds ... as well as Georgia Smoked sausages, Cheddar Cheese Brats, Nachos, tons of chips, cookies and snacks as well as a wide range of bottled and/or canned soda's, tea's, lemonade, etc. All cooked in my "dirty water" as I call it. Pre-seasoned water before boiling the dogs and sausages to add extra unique flavor!

    I'm running a truck... it's hard work... the events take 17 to 22 percent of our takings, which is very high as the events are usually 5 hours trade time. The most I've done in a day was 3k. Roadside is hard as govt regulates where we can operate and the most I've done roadside is 700 dollars. That's 9am park up, 8pm leave.

      @The Greek Physik yes, they kind of skipped over that.. He asked what is your sales, what is your net profit, and he answered we did 417k last year. No follow up on what that actually meant. So 417k in sales is nothing considering the cost of running the business.

    "You are not a restaurant" is the best way to go about this business.. I am starting my food truck also and I had a couple people tell me that we needed a sitting area or benches or somewhere they could eat around the truck and I told them that is not the idea of this we have to get them in and get them out just like you said. The more time they spend there the less money you make off of them one guy could order a burrito and a water and sit there for an hour which in that hour you could serve 20-30 people..so its basically a waste of space ..anyways ..love this story and i hope you keep going higher and higher .

      Start on the weekends at your house and invite friends and family over to see if you have a product . Keep expanding to friends and family and social media. Whatever money you make from donations and selling your product put back in to the business. Even cheaper than a food truck and easier is try to find a gas station you can rent space from on the cheap as a pop up. I started mine that way 5 years ago and finally got my brick and mortar last year. No loans

    Good portion is key. My wife and I went to a food truck, each got a burger. Order was close to $30. No drink, no fries. We stopped at McDicks after because we were hungry.

    Thanks for creating this and sharing his story- super helpful for those of us getting into the industry! Just one note on the production- I felt like the interviewer was always jumping on the other guys words and it made me kind of tense throughout watching. If he just asked a succinct question and then listen to the full answer without jumping in, I think it would’ve flowed much better! Little thing though, overall, nicely done!

    This is my retirement plan. I'm only 30 so I got years to go, but I love cooking. I'm currently a carpenter, but have worked as a chef in some down time during the winter, and quite successfully, however I never really stuck with it because of how unstable it can be. I usually end up in a kitchen temporarily to fix issues, kinda like kitchen nightmares.

      @@UpFlip I'm not sure really. Even at home I make everything from scratch, so I would like to do that as much as possible. My step father is Italian and he left a great impression on me for proper Italian food, like what pasta to use for what sauce.
      Food is always evolving, so it's hard to say, but I would like to have more of a pop up restaurant on wheels and share the romance of Italian food with people, but the prep time for volume really insists on being a proper restaurant.

      While this might be true I believe luck has to do alot with it too. I've seen food trucks where the food is shit and they have lines of people waiting to order . The people running it seem to only want money and are not doing what they like . They serve crappy food and have reached success. What do you have to say to that ?

    I am thinking about a new type of restaurants : eating-spots,
    in eating-spots, food keeps changing, chefs also rotate,
    this is opposed to current restaurants,
    thanks to this rotation of food and chefs, eating-spots are way more powerful than restaurants,
    along with that, there is an app,
    people vote for the food that will be cooked in the next days,
    menu is influenced by the live input of the people via an app

    Here's the reality of a food truck. You are going to find it EXTREMELY difficult to find locations. There are strict zoning laws. And forget about getting into fairs and festivals. They're all sewn up. Also many municipalities will require you to have a LICENSED "brick & mortar" facility as your commissary kitchen, for food prep, storage and cleaning. The inspectors will ask "Where are you getting your water from? What are you doing with your waste water? Where are you storing your bulk ingredients? Where are YOUR toilet facilities during your working hours? No you can't operate 100% from your truck. Think long and hard before you spend your hard earned money.

      Who told you this information? Most of what you said is just not true in Rhode Island.....Fairs and festivals are begging vendors to show up! Permits are a few hundred a year. Health inspectors do not ask where the water come from and you only have to deal with them yearly unless you are at an event and at that point the festival is responsible for water.....and you are NOT required to have a commercial kitchen and you absolutely can run it 100% out of your truck!

    I have two trucks. One for food, another for beverages, and signed a lease to open a stall in summer. My advice is to start small-farmers markets things like that. That way, you become familiar with a food flow and set up. This also helps you figure out the logistics of your truck. It also helps you decide if you really want to do this. It further helps seeing how much sales you can generate. A fabricator will lay this concept out for you so long as you tell him where it will all go. You tell him or her what you cook and the layout, and he conceptualizes the rest. Do all the other things in the meantime (SafeServe exam, DOH inspection, lease a commissary, business licensing, propane inspection, posters, menus, payment processing system, establish a social media presence). When the truck is done, get it wrapped. Then go. I don’t believe in staying one place all the time. You need to see where you can generate the most sales. Anyway, this type of work is grueling and labor intensive. To do this, you MUST be committed.

      @@UpFlip we provide a specialized type of food that is not readily available in my immediate area and definitely not available via food truck. This helped with our edge. There was a lot I learned from the food markets. As a matter of fact, I get a lot of New Yorkers (Brooklynites to be exact) comparing my food to what they get in New York. They are my biggest critics. They also help me hone in on my failures and to do things better. Mistakes also helps you. It's not always bad. I always suggest to push beyond your mistakes and learn from it.

    I just won a bid on a public auction yesterday for my truck. If you want a truck...contact your local school district, colleges, local transpo and ask where do they send their old fleet. You can also purchase a reasonably priced truck from Uhaul truck sales.

    Okay so when you go to the health department do that require taking a class?...Do you have to have a degree in cooking in order to start?..Do all that money you have to pay up front or can you do a loan?

      you should absolutely get a servsafe certificate. besides that I'd recommend having a solid menu with specific recipes and feedback from multiple different people. money wise, if you have a business plan you can go to the SBA or a bank for a loan, just make sure they dont screw you over!

      Mel broke this question down pretty well. To add on, Kyle actually got a culinary management degree. You'll have to check with your area to see if that's required. As far as the health department and questions related to that, it really depends on the city where you'll be starting your business. So do a little research and you can learn more for your specific city.

      Each state can have different rules and county to county within a state can have slightly different rules. The best rule of thumb is, make an appointment with the health department. Bring your menu that you plan on using. Then they can tell you what is required in your trailer/truck for that menu. Many counties have a downloadable pack that gives you the rules and applications to fill out.....we had a local bbq guy spend over 50k on a trailer then wasn't approved by the health department because the drain boards on his sink weren't the right size. most places also require a trucker to have a commissary as well. a place to wash your dishes, dump your grey water, store extra supplies ect ect. some places will require you to park your rig at the commissary that way you can plug your rig into power. keep in mind he is in the pacific northwest. so even in the summer time its cooler than most place. It didn't appear that he had a/c on his unit. but in all honesty the hood vent will suck it out as fast as the a/c put it out. so when its 90 degrees out its at least 20-30 degrees hotter in that trailer. I didn't hear a generator running either. those LOUD generators are annoying to listen to and many places are cracking down on them as well. the whisper quiet generators for a trailer that size can run $7-$10k just depends on your electricity load needed.
