  • Why I know this is not for everyone ,it may be for a select few like myself who enjoyed this cold cut meat growing up so my older crew might consider giving this recipe a try and enjoy it as much as I do god bless.

    Growing up in the north, I have a dear friend to aunt that we would visit. She made the best souse. Even at a very young age, I asked her how to make it. She told me and I never forgot it. I have not made any in years. Watching your video has encouraged me to make some. Thank you

    I love hog head cheese!! My mother, my godmother, my grandma, all made this for me growing up. Never knew how to make it so thank you for posting. Can't wait to make it. Haven't had it in years!!

    We are Northerners and we have made this forever. Made some last week with leftover from butchering a hog. Nothing goes to waste and I have a list of people wanting my head cheese. I use a very big pressure cooker. Makes short work of it. I only add salt, pepper a little garlic and red pepper flakes. Peace all.

    I have got yo try this. Looks sooooo good and simpler, I watched my father make it when I was really small, but never imagine trying to make it. Watched a few other video, but it looked like too much trouble, so I said I wll just buy me a small amount, Souse has gotten so expensive so you have taught me how to do my own.

    Rip ms Matty My mom used to give us this as a treat.And it was so good the same way on crackers.And late in her life she found out how to make it and it was delicious too I miss her so much. RIP Mom

    The souse from the store has so much vinegar in it that I cant stand it. This receipe looks good and I will try it. Maybe less pig ears. I don't like the gristle. Thank you.😊

      If you cook them longer most of that will turn to gel. You can also use other meat by just cooking what's left off the bones but you need that skin and cartilage for the soup or broth that glued it all together.

    Souse is not the same as hog head cheese. They ARE similar. But Souse has chuncks whereas HHC is more emulsified. Also Souse is more sour than HHC.
    But I WILL try your recipe!!

    Thanks for the video. Just like I make it. My mom used to cook a hog head, when making her souse meat. I personally can’t use the hog head, it seems like he’s looking at me…

    You got the right approach brother, I will give it a try, but I will add some meat so I could fool some of my relatives. I like head cheese, but never had it before until I found it at a Deli.....Bon appetite!!!

    I love your video, reminds me of when my father made this, the first time I seen him make it he used a hog head, but after that he used pig feet and ears like you did and friends of our family would ask him to make it, it was delish, so I'm gonna try my own hand at it, I know I can make it, so thanks for your recipe 🖐️

    That looks so good!❤ I was craving some so bad and same, I don't care for or eat pig ears, tails, chitterlings, or none of that but that souse I will eat!😂 I grew up loving the red orange spicy one. Anyway, I bought some the other day and it was ok but didn't have that flavor of yesterday. This right here looks amazing! Thanks for sharing your secrets!

    I had it homemade only once and she used a hogs head. It was delicious but this looks easier to make. I think I’ll try this.

    Sistah-Gurl, my mother had me helping her make hog head cheese. By the time I was 12, I was making it😊. Back in the day I would eat so much of it in one sitting. As I've age😊, I stopped making it and would buy it. Be careful eating a lot at one time [if you have high blood pressure]. Now I've got to have some, with light spread of mustard 😋

    I love the vinegar. I remember my mom making vinegar but she got down and made me use a grinder so I had to do one better and get them food processor, take the bones out and put it in the food processor

    I ate it as a child out here in Southern California. Mom too old now and she don’t make it. Can’t buy it at the supermarket either.

    No body makes hog head cheese like my daddy? I am going to have to try yours. Daddy never showed or told us how he did bis. One thing for certain, I tried the "souse meat" from the store and it was gross and had so much vinegary flavor I thought I'd be pickled inside to eat it all. It was so bad.

    This looks more like my grandmother's souse meat than any that I have seen. She didn't use any vinegar and I can't find any at the store without it.

      No! Cold. your to eat like sandwich meat it’s a cold cut sweetie if you heat it up it will melt into the original texture. Allow it to chill and enjoy with crackers
