- We're giving the stage to the 'youngsters' in this diary episode - it's great when we find folks who take inspiration from the Pasta Grannies. Paolo has watched every single episode on this channel! He makes 12 egg doughs for fun, if you want to try, start with 2 eggs:
200g 00 or plain flour and 2 eggs plus a half teaspoon of olive oil
celery stick (if it has leaves, use them), onion, carrot, 400g very good quality sausage meat, 200g peas, 50ml red wine, 300ml passata, salt, pepper. - Zábava

My father made a huge pasta board like that and a really long rolling pin for my mother here in the U.S. because there was no way of buying such things. Fresh pasta was a religion for them. We hosted Thanksgiving every year for the extended family, and as someone from Liguria, my mother always made ravioli with a meat, cheese, green vegetable filling. She made ravioli for days before the big event. Then there was, of course, traditional antipasto, and a stuffed turkey, for the Americanized, accompanied, however, by Italian sides. Oh, those were the glory days!

We grew up with home made fusilli (the long ones you make with the spoke). My Nonna made them for every holiday and they were to die for. I miss her, her cooking, my mom and dad and I still have the board he made (he was a falegname in Italy and here in the US a carpenter). And now thanks to Pasta Grannies I can make or try to make fusilli.. stupid me was never interested when I should have been back in the day when my father begged me to write things down, to write his story, when I should have been clamoring to be with my Nonna and recording her history and recipes (even though it wasn't as easy as it is now with cell phones and cameras and all). I urge the youngsters who are blessed with parents and grandparents and traditions and culture ... record it.
Paolo is a different kind of a Pasta Granny but I love what he is doing. Creating perfect fresh pasta with knowledge and passion.

We know now why he’s won so many competitions! I am so impressed with this young man from his chickens to his own home grown ingredients and his collection of kitchen utensils you will never be hungry at his home!
Watching every pasta maker on this channel is inspiring, but Paolo was especially so. Just wow!

I have to echo what others have said, his passion for what he does shines through! I was going to tease about him not being a granny, or even old enough to be a nonno but wow, after watching him enjoy his craft I just forgot all about that.
