I still use a base model Weber kettle; snake method and get bbq as good as anything I’ve had from Franklin or salt lick , heim… etc
We use an old 22" Weber kettle too, using the snake method. Smoking perfection!

I've had beef bacon but never just straight beef belly. My wife got me a pellet smoker for my birthday and I have a bag of knottywood plum and almond coming. I'm definitely gonna need to try this!

I've made beef bacon a couple of times with beef belly and it's AWESOME!!! I do a few varieties and my favorite is a Black pepper/ Maple sugar rub it is off the charts good!
We are definitely living in end times when Jeremy is cooking with pellets.

As is the case with a lot of people. He's got a young family. It's tough to always find the time to babysit the smoker. That and he's got every tool. Got to use them all!

Jeremy I was thinking of getting a smoker for the convenience. I smoked a pork Boston butter on my weber. Not wanting to manage the fire for 12 to 15 hours I took it off once I hit the stall. About 3.5 hours. Wrapped it in aluminum foil and put it in my oven for 9 hours at 225 degrees. Took it out and put it in my cooler 2 more hours. It was awesome. Here it my challenge. Does make sense to buy an expensive smoker and burn expensive pellets for12 to 15 hours when it easier and cheaper to to start it smoking on then weber and finish off in the oven. I believe you said on one of your videos that once you wrap there is no more smoke flavor to be had.
I use that exact mix on my Pit Boss pellet smoker! I LOVE IT!
Amazing! a lot of crafters from Philippines uses beef belly and some if not most people prefer it over brisket. Fat is flavor! and is a much easier cut to find than brisket
Love the episode, and your content has helped me advance my bbqing so much. I have an idea for an episode. I'd love to see a head to head comparison of high end pellet smokers like the Yoder 640S, Lone Star Grillz Pellet, Pits and Spits Maverick 850. It is a self serving idea, because I'm trying to decide between those for my next cooker!

Thanks I just saw beef belly for the 1st time and grabbed it immediately I work for a bbq company who smokes briskets alot now we got something new on the menu I'm thinking adding it in my bbq baked beans or make beef blts with them and put them as a special on the menu great video peace!

Beef belly is also known as beef navel or plate. It comes off the 3-bone plate ribs often used in Texas barbecue. It is the traditional cut used to make eastern European pastrami popular in New York City delicatessens.
I was just going to add the AKA Beef Navel plate but you beat me to the punch! we use it for our burnt ends, a version of the popular pork belly but a little less cost. It also has a longer cook time that allows me to cook it with our over night load.

The plum and almond mix is great. I do notice the plum clumps up a bit in the smoke pot. Not enough to clog anything up but about a 2” ball.

I have ordered from Porter Road and loved all the meat I purchased. My biggest complaint is they are out of stock of everything Jeremy says "you have to try". I am to the point where Jeremy needs to find the perfect way to cook their most plentiful item just so I stand a chance of ordering it.
Hi Jeremey. Question on your pellet cookers. Pitts & Spitts 1250 vs Yoder 640. Which do you prefer? I’m down to these two as my next cooker.
He’s clever in catering for the many people who have them.I have three offsets plus a Yoder 1500s pellet and Lonestar Grillz pellet on the way and they cook very very well, though an offset as we know is better.But I do not want to be chained to an offset all day.

Beef belly is very common for us here in NYC. Thousands of Halal delis (we call them "bodegas") use beef over pork for bacon. It's a nice change of pace IMO!

Hey Jeremy, just curious I bought 2 full packers of beef belly but even after cooking it to 200f and holding, that big band of fat in the middle did not render and was completely inferior to even a cheap brisket. Do you feel the same way or is there something I am missing?

have you or anyone else used any of the vertical style pellet smokers? wonder if they would add more smoke flavor than the horizontal ones?
I use a vertical Pit Boss pellet smoker and I like the smoky flavor I get on pulled pork, brisket, and ribs.
I don't see the point of the pellet grills. I still grill with propane. The fat drips on the flavorizers and infuses whatever you grill with that great grilled flavor. No wood, charcoal, or pellets required. If I wanted more flavor I would go to a charcoal grill, never a pellet grill.
Pellet grills have both mechanical and electrical components that will eventually fail. Gas and charcoal grills don't.
