With good caster values (I forgot which way the numbers go, move the wheels more to the back), you can get an engine-less (or fuel-less) car moving from a dead stop on flat terrain by wiggling the steering side to side in the right rhythm
I've been to Pike's Peak and recognize that first turn it's so funny to see you guys Beamng this drive when it's so awe inspiring in real life.
Having driven this road multiple times, your brakes would be TOAST if you kept using them all the way down. There's a spot about halfway down where the rangers measure the temperature of your brakes; if it's too high, you have to sit for 15-20 minutes to let them cool off. I rarely USE brakes...I know how to downshift...

I'd love to see an Escape the Flood on Pike's Peak but I'm not sure it's possible. I tried all the settings but it wouldn't show the water at all. Not sure if it's a terrain height limit thing? Could you try it?

CZcams recommended, so I watched, was pretty funny, I'll checkout more vids and throw a subscription. A little constructive criticism, I think being able to hear the banter between everyone and all the action would've made it so much better.

Does tire pressure make much difference in how well the cars hold their speed in soapbox mode?
Yes, I think. I have never tried it, but lower pressure results in higher grip, but lower speed due rolling resistance. Higher pressure works oppositely.

You need more weight in the front so you can drift. Rip out the transmission instead of the engine.

I feel like there has to be some floating point error where sometimes when you reset, the draft goes from 0 to 99999 for no reason and the car just explodes from the sudden forces.
