- This Gluten Free Pizza Crust Recipe is nothing short of amazing. The Caputo Gluten Free Flour blend is used for it and it tastes as good as pizza does with a dough made with wheat flour. While the flour is not as cheap as other gluten free flour options, it is well worth the cost because of the results and how good it tastes. That being said, it is cheaper than what frozen or take out pizzas will cost you. You’ll get 3-4 pizzas per 2.2lb. bag.
Ingredients in Caputo Gluten Free Flour as of the recording date of this video. Always read ingredients on packages as ingredients can change.
Gluten Free Wheat Starch
Dextrose
Maize Starch
Buckwheat Flour
Rice Starch
Psyllium Seed Fibres
Thickener: Guar
Flavoring
Gluten Free Pizza Crust Ingredients:
2 cups Caputo Fioreglut gluten free flour, plus extra for dusting surfaces (260 grams)
1 ½ tsp Salt
1 tsp Instant Yeast (5 Grams)
1 Cup Warm Water (100ºF - 105ºF) (215 Grams)
2 tsp. Honey
1 tsp Olive Oil (8 Grams)
Directions:
Preheat the oven to the lowest temperature and turn it off as soon as it is preheated.
Make the Dough
1. Combine Caputo gluten free flour, yeast and salt in a large mixing bowl, whisking to combine.
2. In a measuring cup or small bowl, whisk the water, honey and olive oil together.
3. Add the liquid ingredients to the dry ingredients and mix with a sturdy spoon for about two minutes until the dough/batter is smooth.
4. Add the pizza dough/batter to a large bowl that has been lightly greased with olive oil.
5. Coat the top of the pizza dough with olive oil.
6. Cover the bowl with its lid or plastic wrap and place in the warmed oven for 1-2 hours until the dough has doubled in size.
Baking the Pizza
1. 30 minutes before baking, place a pizza stone in the oven on the middle shelf and preheat the oven to 550ºF
2. Place a sheet of parchment paper on a pizza screen or upside down baking sheet and dust lightly with gluten free flour.
3. Turn the pizza dough onto the parchment paper.
4. Using lightly oiled, wet or floured hands, press the dough into a 12” circle.
5. Once the oven is preheated use the pizza screen or baking sheet and slide the crust and parchment paper off the pan onto the pizza stone.
6. Bake the crust for 6-7 minutes.
7. Remove the crust and top with sauce, cheese and your favorite pizza toppings.
8. Return the pizza to the oven and place directly on the pizza stone without the parchment paper.
9. Bake for an additional 6-7 minutes until the cheese is melted and bubbly.
10. Remove the Gluten Free Pizza from the oven, cut and enjoy.
Here are some recipe tips for success making this gluten free dough but I’ve found it to be less fussy than other recipes.
1. Measure Flour the ingredients by volume or weight. Both work for this recipe.
2. The honey helps the crust rise more but can be left out.
3. Use oiled, wet, or floured hands to shape the dough instead of rolling it.

This deserves all the attention! I just made the pizza following this recipe and process exactly and it's the best GF i have ever had! Super fluffy, super light, mine OVER doubled when it rose and baked just as high. I honestly can't believe it. Taste of the pizza is great - vitrually the same as a normal pizza!

Like you, my wife has to be glutin free (for her it is Ciliac, 15 years), and I do most of the cooking for us.
I stumbled on to this vidio of yours and as a result I ordered the flour from Amazon and this afternoon I gave it a try. Half pepperoni, salame, olives, & mushrooms; and half bbq chicken.
O, my goodness,,, it was phenomenal. The wife's response; "that's the best pizza I've had in 15 years (save one pizza shop up in Washington state).

Chuck, Thank you so much for sharing! That's great to hear. Did she have any reaction to the crust since the GF flour main ingredient is wheat starch? I know being celiac she has to watch ingredients even more closely than my wife does.
If you're looking for a good dinner roll recipe and have a walmart nearby, pick up a bag of their gluten free flour blend (usually found on their gluten free aisle). It's inexpensive and the dinner rolls come out great. They freeze really well too. My wife has put that on her request list for me to make more of them.

I make my own pizza flour, I prefer a thin crust so it goes further. I can’t eat tomatoes so I do a thick cheese sauce to replace it. I’m lucky, my oven has a proof setting. But another way is using the oven light. In my oven, the light put the temp at 97f. But you have to turn the light on hours before.
Here's something I do with Caputo-based crust: put some sauce on there before you pre-bake the crust. You don't want to put all of your sauce o before the pre-bake, but maybe about half of it.
I think this does two things. First, direct exposure to the oven's heating element should reduce the sauce and create a more complex flavor. Second, the crust ends up with better flavor because putting sauce on it when it's still raw lets the sauce "seep in" a bit more. I think the end result is a little more cohesive. I'm no chef, though; just a suggestion! :-)

Parbaking this crust is the key. I had to figure it out myself, wish I'd found this video a year ago!! 😂 I parbake mine on parchment on a pizza stone. Then final back it on the pizza stone without the parchment.

I make my own pizza flour partly. I buy cup4cup multipurpose, I add flax, psyllium husk powder and cornstarch to i with yeast. I prefer a thin crust so my flour goes further.
I've heard good stuff about cup4cup. Is that the GF flour blend you use most often?
@@SavorySaver Yes, because for 3lbs on Amazon it works out cheaper than buying the flours separately. Their pizza flour is only 18oz, the difference between the pizza and the multipurpose, is adding cornstarch to the pizza flour, but 18oz is alot less than 3lbs.

I have made your recipe twice but not with Caputo. It is out of my budget. I used Divided Sunset Gluten Free, All-Purpose Flour. I get it at Walmart. 2lbs for 4.88. Now your video is excellent. I could see your texture. I was able to replicate it with this flour. I had to add a 1/4 to 1/2 more water. Otherwise, I followed your recipe. Thank you again!

Gusta Supplies is Canadian. They have it cheaper than Amazon Ca . There's another Canadian company but I can't remember their name right now . Edit Berchicci is the other company. Gusta is $20, Berchicci is $15, I don't know the shipping costs though. AmazonCa wants $40 for the flour and $18 for shipping.
Is that Dough good for cinnamon rolls aswell ?
The dough presses out easily, but I think rolling it up. Cinnamon roll fashion would be difficult. This recipe is probably not good for cinnamon rolls. Thank you so much for watching!

I was surprised you used the Parmesan and mozzarella cheeses that were pre-shredded as they almost always contain a non-caking agent which contains wheat. My daughter has celiac and I have a wheat allergy. Neither one of us can use any pre-shredded cheese and always buy the blocks of cheese and shred it ourselves.
The crust looks amazing and I'm anxious to try it but in my opinion, you shouldn't call it gluten-free pizza and use either of the cheeses that you used.
Hi Sue. We are not a celiac household and I know that requires even more precautions with ingredients. Every person and household has different reactions to ingredients and preservatives. My wife does not have any reactions to preshredded cheeses and the ones we use most often contain potato starch in them. @@SuePeifer I just checked a couple bags of the Kraft brand that I currently have. They both use cornstarch in them for anti-caking but I there is a store brand that we use that does use potato starch in it. You may have to check multiple brands. Yes, there is always something new to learn and as soon as we do it changes. It's always an adventure😁
I just bought a Vintage Saladmaster manual shredder/slicer on eBay. I am going to do this. The one I bought was brand new and still in its original box. You won't find many that are new but there are several in good shape. I hate the new shredders, everything is made of plastic. And everything breaks. These will last a very long time.

WOW! That's nuts! It's always a search trying to find affordable gluten free options. I just tried a different wheat starch based gluten free flour called Molino. I used it for gluten free bread. Check out that brand and see if it's available in Canada. It was more expensive here in the states than Caputo was but may be worth checking out.

This is because wheat starch is considered by the FDA to be an ingredient processed to remove gluten. Wheat starch is not wheat grain and it is not wheat protein.
