Sweetened rice with coconut milk served with mango is an actual dessert you can find at restaurants and it's loved by many... though I don't know how it'll taste with other fruits cause mango when ripe is super sweet and perfectly goes well with the sweet rice unlike maybe sour strawberries and kiwi.
For the popsicles instead of just putting it in the freezer after you put the fruit in you might want to leave it out a little so the water will take in the flavor of the fruit or like blend the fruit/mash it up or else your basically biting into just plain ice til you get to the fruit
