    I made these idlis today and they were so soft and fluffy. I was falling short of half cup idli rava so I added normal rava and still they turned out to be soft and tasty. My family liked them a lot..Thank you mam :-)

      God today I prepared first time idly batter imagine....paranoid with mixer grinder always letting me down, I kept it in the freezer and finished, it was fun to check the uradh dal batter too...so happy I learnt to make idlis

    Very good explanation. Udad daal should have enough air incorporated. Test is to put a drop of dough in plain water and it should float. I guess if use mixer to grind the daal, it does not do this as good. So investment in stone grinder is worth it.

      the volume of urad increases by 2 .5 x when grounded on stone, when pulvarised it is merely 1.5 x.... you made a good point Haris....

    Thank u......I used to soak 1st in a day and get grinded and keep for fermentation whole night..Sometimes batter get over fermented ...But yr method require less time and I am sure one can get correct taste and fluffiness of idli....Trying this.....Thanks mam !👍

    Gita ji, I generally put 3 cups rice rava and 1 cup urad dal to grind in mixer. No need to add methi dhana also. It is too soft. Nowadays, I add half cup of raw rice also with this. It is also too soft. Try this, if you wish. Thanks.

      @VIJAYA LAKSHMI RANGARAJAN , thanks for your liking. As told above, the same measurement. Soak all the above separately for three hours and grind separately. Need not to grind rice rava too much. Soak rice rava with only little bit of water. When you are grinding rice rava, nanna pizhinjhu podanum. Water should not be there. Otherwise, idly maavu will be runny.

      @@kestrel356 , urad dal means ulutham paruppu in Tamil, which is white in colour. It is of 2 sizes, one is half and another is full. Generally, for grinding idly and Dosa, we have to use full size Ulutham paruppu.
