I’ve made dishes from both Joshua and Mike, I find Joshua makes you feel like a chef at home (good restaurant food) while Mike’s dishes feel like quality, wholesome home cookin’. I enjoy making recipes from both.
To be fair tho, Gordon’s recipe is probably the only one that can be done in 15 mins tho, the other two there is no way you can get done in 15 minutes

Putting miso into the boiling broth kills it. The chefs should have made a tare with it in their versions 👍
I just checked joshuas video. He put the miso in after he cut off the heat so it wasn't boiling. No tare still, but boiling the miso to death is a case of not following or understanding the instructions here.

Easier, faster, cheaper, more common ingredients, and on my personal bias chicken miso ramen is excellent.
Yeah that's because he's actually a home cook who makes recipes for home cooks, and is passionate about it. He's not a bougee clout chaser. He worries about the food, not his own image, unlike the other two.

Man... Adam Liaw taught me how to make Ramen. His videos are frankly the best start I've ever had learning a dish. I love all the guys you chose but I think you might want to give Adam a try. His videos are slow but they make so much sense once you understand the method. Love your content man. Keep it up!
I made Mike's ramen at work a while back. I did add an ingredient or two... but so simple and easy. I made enough for myself and for my coworkers to try. Everything who tried it loved it! A few of them even went and made it them selves! Great work
Roast bones in the oven before using in the broth. I would have removed the skin and fried separately to render more fat and crisp up the skin. Then chopped up the skin as a garnish.
roasted bones don't really fit the "ramen" taste tbh
It's supposed to be a quick weeknight meal you whip up in 15 minutes or so, roasting the bones would take way too much time
@@steveshin820 the key to 15 minute meals is you should already have the broth done. Which is what he did. He already had broth/stock done for at least one of the recipes.
The Franken Ramen really let me down. I was really expecting him to say hey these are the elements that I incorporated into this last one because of XYZ then critique it and say how all of those elements came together. When you say I’m going to incorporate the best elements of each into one id didn’t expect you to just dump everything in a bowl together. Done like an afterthought so I felt a little betrayed by the fact that you said it so early in the video.

I totally agree with this ranking, the only thing is PHC was maybe a little too simplistic for me, but that's my own personal taste but other than that all these ramens look super tasty
I have all the ingredients for Joshua's dish.... including the doubanjiang. .... except for the corn. That's the ingredient that's stopping me. I never have corn on hand. I think doubanjiang is a pretty common ingredient to have on hand if you delve at all into Szechuan style cooking? It's definitely a pantry staple for me since there's so many flavorful dishes you can make with it, starting with one of my top dishes, Mabo Tofu.

3:05 - amusingly, “gomasuri” (grinding sesame seeds) is the term used in Japanese for a suckup or brown-noser.
can some one tell me what kosher salt is? is it fine table salt or is it like grinded down sea salt?
I’d recommend cooking the mushrooms first with no oil or anything in the pan, they contain a lot of moisture and I hate the rubbery texture, so cooking them down first is my way, and then either removing or adding the meat and onion to it.
Also when I use dried shiitake, I soak it for maybe 5-10 min first, scrub them with salt, rinse and dry, then slice thinly before adding them to my soup bases ☺️

Gordon lost me at nori. I can't stomach it, just a preference. I have made some ofGordon's disheas and we all know he's the real deal. I've made some of Mike and Josh's as well. I have followed Mike's channel probably the longest but I enjoy them all. Ethan Chlebowski is worth checking out as well. I can't remember if I've seen him make Ramen or not. I just feel like plugging his channel because I enjoy it.
