That's a great question! I don't think I have one all-time favorite, but some of my favorites are Matt Garstka, Nate Smith, Chris Turner, JD Beck, and Yussef Dayes.

Any advice on drum emulation software for iOS? Been messing with samples, but only got the iPad available at this point (aaaand maybe a 4x4 pad that shipped today. Apparently my older statement about ‘taking a backseat’ is out the window xD my brain won’t shutoff about it)
I don't know of any good options for iOS, you'd have to do some research! If you find anything high quality, definitely let me know!

iOS Drum Emulation:
Easiest, cheapest, beginner: BeatHawk ($10usd) and the Acoustic Drum Pack iap ($5usd) - with minimal setup, can mimic this layout with both round robin and velocity layers. Only one kit, but amazing for following Dragons method
Legit buildable, expert, etc: AudioLayer ($15usd) and drum sample packs off DrumDrops ($15-$25usd each). Takes a lot more setup (must configure your controller to midi cc in device setup app which keys you want as there's no midi learn) - best sound, legit drums sampled with dense (hundreds) of samples setup for round robin (dont know maybe 5-7 each) and velocity layers (upwards od 25 ive been seeing. Don't know limits). Once setup, absolute banger. Mimics the PC based setup VERY well

I used Addictive Drums for this one! I think it's from the Modern Soul & RnB pack
