Big Red Brisket | How to cook a brisket on the UDS!

  • How to cook brisket on UDS | Cooking a brisket and wrapping with big red!
    Smoked Brisket on a drum / UDS. Brisket Recipe will work on any UDS /drum. Also, check out my trimming video to see how we prep for smoking brisket.
    This one we cook at 300 degrees Bring drum smoker. Start by lighting a part of the basket of charcoal. Place brisket that has been seasoned with your favorite Rub in Smoker (I like salt and pepper) and let it cook until it has just the right feel and the probe is going in like butter. Remove brisket from smoker and separate point from the flat. Place the flat in foil and set aside while you make burnt ends. Once done slice flat against the grain and pour juices that formed in foil over the slices and enjoy.

    Love the fish hook. I think using it on a PBC may make basket unstable. Which is a shame, as great idea.

    have you noticed any difference in texture using a aluminum pan vs wrapping in aluminum foil? ive heard some people say its pot roast in a pan.

      i like the pans, i want to keep the juice. if it overcooks, thats when the fall a part roast type flavor creeks in!

      i was really just having fun with the big red, i didn't really notice it in the flavor of the brisket! however i do think adding liquid to the wrap helps the Texas crutch process...and adds moisture to the end result!

    What kind of controller you using?? Fixing to build drum. Some say don't worry don't need one others say just dial it in.
    And is that smoke ring or Big Red ring. Lol

    Looks excellent.
    Is the drink Big Red the same as the chewinggum - cinnamon? If so it must have been a real nice add of flavour :)
    I only cooked one brisket in my life a few weeks back - On my UDS with a Party Q controller :)

    Does your brisket get that “fajita” or grilled flavor when smoked on the uds? I’ve done a couple on my pitbarrel, but on the rack, not hanging. I always seem to get that grilled taste on my brisket.

      ive never hung one either! i do get the charcoal flavor from the drum, but not fajita. trust your adding wood chucks as well, i like pecan and a little hickory! i did one with a lot of hickory...too much smoke for me!

      I use b&b oak briquettes and a couple of chunks of oak. I guess I’m just not used to the grilled flavor on a brisket. Does it do good for you in comp?
