Guys... You don't need this for Kombucha.. The screen I put on there was for Water Kefir to keep the grains from getting stuck in the spout.. But, try to get a spout you can unscrew, because, the Kombucha Scoby will form in the spout/valve itself from time to time.. Just unscrew it, pull the scoby out and put it back in.. Have a friend hold their finger over the hole while you deal with the scoby..

Sorry. I missed your question. Just reviewing. Yes. Kombucha goes from Aerobic to Anerobic in it's fermentation. The covering you see on the top is,, well, a sort of mold. It is called a "SCOBY". Symbiotic Culture of Bacteria and Yeast. So, not technically a mold, but, I think those who did not know what a SCOBY was and saw something floating, would typically be considered Mold. It is heavy in Lacto and Biffido styles of bacteria. Those are the two most Prevalent in a "Healthy Gut Microbiome". It is why "Home Made" Kombucha, Water Keifer and Milk Keifer is such a fantastic tool to keep your Gut in good working order. Your Gut Microbiome is the Basis or Beginning or more correctly stated, Support System of your Immune System. Imagine drinking "Municipal Water" system water without declorinating it.
Just don't worry about it, and replace it and keep it in balance every day. That plus a good balanced diet of minerals and vitamins (especially Vitamin D, Zinc, Copper and C), and my 85 year old Mother made it through the Pan/Plandemic without a single sick day, and she is really bad about Hugging and Spanking my customers, and didn't wear a mask..

SCOBY=Symbiotic Culture Of Bacteria and Yeast. A leathery milk white Gel material that hosts the Bacteria and Yeast. Also covers the top to adjust the amount of air getting to the Kombucha. Aerobic vs Anerobic. Not one or the other, but both or between.
