    DahiBara Aludum recipe : It is a very popular Odia street food . Dahi ( Thin curd tempered with Indian spices such as curry leaves, mustard and cumin seeds , dry red chilli etc ), Bara ( Soaked and fried urad dal paste dumplings ) , AluDum ( Boiled potato is cooked with spicy gravy ). It takes little more time to prepare but, it tastes divine .As it is a healthy food , it can be taken in the breakfast or in evening snack. So, watch this delicious and unique Odisha style DahiBara AluDum. Try it at home and enjoy .
    Ingredients:
    - For making Urad dal paste Vada / Bara we need :
    1. White urad dal - 1 cup ( You can also use black urad lentil )
    2. Semolina / Sooji - 1 tbsp
    - For making Curd water / Dahi Pani we need :
    1. Curd - 1 cp
    2. Water - 1 glass
    3. Fresh curry leaves - 1 stem ( 6 - 8 leaves )
    4. Chopped coriander leaves - 1 tbsp
    5. Cumin seeds - 1/2 tsp
    6. Mustard seeds - 12 tsp
    7. Black salt - 1/2 tbsp ( or add as per taste )
    8. Dry red chilli - 2
    9. Chopped onion - 1 ( Medium ) - for garnishing
    10. Fried sev ( For garnishing )
    11. Dry red chilli flakes - 1/2 tbsp or 1 no
    12. Roasted cumin seed powder - A pinch
    13. Refined oil - 1 tbsp
    - For making Potato gravy / Alu Dum we need :
    1. Boiled potato - 3 ( Medium ) - Cut into big square size
    2. Chopped onion - 1 ( Big )
    3. Chopped tomato - 1 ( Medium )
    4. Cumin seeds - 1/2 tsp
    5. Dry red chilli - 1
    6. Cardamom - 1
    7. Cinnamon stick - 1
    8. Bay leaf - 1
    9. Ginger and garlic paste - 1 tsp
    10. Finely chopped coriander - 1 tbsp
    11. Turmeric powder - 1/2 tsp
    12. Coriander powder - 1/2 tsp
    13. Roasted cumin powder - 1/2 tsp
    14. Garam masala - 1/2 tsp
    15. Kashmiri red chilli powder - 1 tsp
    16. Water - 1/2 glass ( Or add as per the required garvy consistency )
    17. Mustard oil - ( 2 - 3 tbsp )

    Actually I'm from Jharkhand and I have tested this in 2018 when I went to Khurda for my Railway Exams.
    I had travelled from Jharkhand to Odisha and I need some food because I'm so hungry and when I stepped out of Khurda Railway station searching for hotel/ restaurant I had seen many people eating this that's why I decided to taste this and I liked this.
    But I am in hurry that's why I forgotten to asked the name of the disc.
    Eventually I saw your video's thumbnail my mind recall that this is what I had ate in Khurda and I came here.

    Dear Sushree Mrinalini
    Today just I watched Ur video related to दहिबडा।
    Here in Hindi-speaking area ppl don't know about this Odiya Style of preparing Dahi, but they use just the plain fridge-dahi. Almost none uses the आलुदम।
    But just one simple-lack(rather U may say the ''DIFFERENCE'') in Ur preparation,the soaking method of Bada in water. I think, U must will like the soaking style of Our Area.
    Here in this Hindi-area, usually we ppl garnish two teaspoon of Asafoetida with some butter or Ghee and then pour some water, then make it boil hard. Then the so called prepared-Bada is soaked in this Hing-Water. Usually, plain boiled-water isn't used here.
    Besides, ppl here use (उडद और मूँग)and I admit that मूँगis less-tasty thanसूजी as U have used, Ur method is far more better and tasty than our Procedure.
    I would like to propose U humbly to think over this method for once, I believe, U will must like.
    And,all the rest of Ur procedures r quite remarkable n new to Us, especially I myself appreciated Ur style n methods very very high.

      There difference between dahi bhalla and dahi vada my friend. She has prepared dahi vada aloo dum. You have given recipe of Dahi bhalla which is famous in North India.

      And honestly no offense here, I hate dahi bhalla because of the sweetness of the curd. In Odisha, the dahi vada (bara) is more of a spicy and sour dish with a lot of complexity flavor and texture wise. And yes, why we use only urad dal to make vada is, it gives that spongy texture which can soak in the diluted dahi mix well.

    I have 2 questions---1.How long should we soak the ‘bara’ in water?
    2.Can we use buttermilk for soaking them?
