KettleDialᵗᵐ Test: Will It Prevent Flare Ups on the Weber?

  • I bought a KettleDial, by FireDial. FireDial is a brand of baffles or heat diffusers popular for drum and bullet smokers, such as a WSM or UDS. Last year or so they came out with a version for the Weber Kettle. I purchased the KettleDial. This was my first cook with this. I documented it in this video. I wanted to see if I could cook an entire ten pounds of chicken leg quarters with out the flames flaring up. I plan to use this for slow smoking and fire roasting.

    Hey Big Lew, yes you can ALSO use the Kettle dial, in a UDS.... Great video though..... while this is mainly for a Kettle for (in)direct heat (smoking) of a shoulder or something, its interesting to see how well it does to prevent flare ups for grilling. Glad the ones in the middle took longer, that was the idea! Glad you figured this out without instructions! Another tip is to rotate the lid 90 degrees every 15 min to cook even.... that's assuming coals are even at the bottom (no minion) which will even it out. Glad you found a new favorite!

      Well, if I had rotated the lid every fifteen minutes, I might would have shown my non LavaLock thermometer on the lid. LOL (it’s an OKJ BTW)
      I realize now that it can and should be used used for low and slow smoked barbecue. However, I saw the CZcams video from Island Outdoors (or Lavalock) were the fella was grilling beautiful burgers with no flare ups at all, then he put hot dogs on. I ordered it right away after seeing that video. I didn’t read much else about it until after I ordered it. Both burgers and chicken can be tricky to do on a kettle grill because of the risk of flames flaring up. So that’s what I thought it was for. Now I know better. Even so, it’s still a pretty good flame tamer. I proved it with these chicken quarters.

      @@BigLewBBQ LOL. Yea 100% true. It's a good hidden feature. The original idea was to just show that you can't burn anything in the center. The burgers were just really a test, showing how well it would work for low and slow. So you kinda brought this new (no flare up) feature to our attention.... good stuff Big Lew!

    Leg quarters looked great! Bet the skin tasted delicious. The accessory did what you wanted it to do. Win in your book. It looks heavy duty and nice design to it. Looking forward to seeing how you get even cooks.

      I got to figure out how to set up the coals for more even cooking. Even so all the chicken was great. They’re is no way you could cook that much chicken over the entire surface of the grate with out flare ups on a stock kettle. Thanks for watching Ken.

    Thanks Big Lou!! Loved this video! This is Easter Sunday and I purchased a plate diffuser to do this :
    using lump charcoal with a few cherry wood chunks to slow smoke and heat up a fully pre cooked Kirkland Spiral cut ham. Saw a recipe for using Dijon mustard as the binder ; then coat with your fave bbq dry rub; then on kettle for 2-1/2 hours @ 250 degrees. Then final baste w/ Killer Hogs bbq vinegar sauce for 1/2 hour for the glaze. : )

    That looks to be a great Weber accessory. You are correct on the flare ups when not cooking indirect.

      Yeah, if you cook indirect you can’t use the entire surface of the grill grate. A ten pound bag of chicken quarters wouldn’t fit in one batch. I should be able to cook twenty to twenty-five burger patties at the same time with this and not worry about flames and grease fires.

      I was surprised it was only $30 something bucks. It seems like most Kettle accessories cost more than the kettle.

      @@griddlecookeatandmore it was $27 at BBQSmokerMods.com but shipping was nearly 15 bucks. It was $35 at Amazon but only $8 to ship. So either way it was just under fifty bucks to get it here.
      If one has the free shipping at Amazon then that is the best deal.

    Payton Place.. just soz yz know, i grew-up along the river with many friends that work
    in the construction industry. Roy worked for a large, local builder and started as an apprentice,
    worked his way up to front loaders, and D-9 dozers. He loved to BBQ. I'd take over a 12 pack,
    we would cook up some chicken, and mashers...and when the chicken was done, he would
    take the mashers out of the 350' oven from being warmed
    bare handed. My jaw dropped. He still does it today...his hands

    I used the firedial from my WSM on my kettle to rotisserie a turkey. It worked like it is supposed to.
    I wonder if you had the standard wire grates if you would have had as much charring.

    Great video…I may have to get me a fire dial! I wonder if you dumped a a full lit chimney of coals in the kettle and scattered them around (as evenly as possible) if that would help the heat be even? Who knows? But I enjoyed watching.

      agreed
      the center will cook slower ( so you can smoke low and slow like on a WSM) thats part of the design

    Any idea how long a full load of charcoal will last? It looks like adding charcoal would be awkward if doing a long cook, like a brisket.

    Do you still use the fire dial? How well does it work with ribs or a pork butt around the 275 range? Is it hard to clean

      I only don’t use it much, because I find use my Weber much. It is as easy (or difficult) to maintain as sunny carbon steel.

      I intend to. I just ordered it Monday, it arrived Thursday, and this first cook was done on Saturday. I plan to use it a lot more. I need to gain some experience with it. Refueling during a long cook could be complicated. Yet it is supposed to smoke stuff

      @@HeavyMetalBarBQue yep, it sticks. Doesn’t mean it’s not stainless, but it is not 316 or 304. It’s not made out of the same stuff as my vortex or SNS.
      I’m going to send an Email to the lavalock. I’ll get back to you as I see what they say.

      Probably not because the the OKJ Blackjack only has three grate brackets spaced at 120° apart. The Weber has four spaced at 90° apart. This FireDial for the kettle has four notches at 90° to accommodate the grate brackets. I will likely only use it on the Weber and occasionally in my UDS.

    I've been using the Firedial for awhile now and I have a couple of tips... I cover the Firedial in foil and season it with a light covering of oil to help keep it clean and protect it from rust. I also store it in my garage instead of outside. I'm on my second season with mine and it has not warped or rusted. For the money this is the best diffuser on the market I think.
