The 2003 OVA is basically Hokuto No Ken 3 and is the last canon, it talks about Kenshiro’s life after leaving Bat and Lin. At this point, he’s back to being alone again. There really wasn’t much that happened in the 3rd of the series because pretty much everything has been dealt with.
I really wish that the anime covered the rest of the chapters before concluding but you know, you're right there isn't much that has happened. Honestly i wish that they rebooted the series with Raoh's son, Ryu. That would have been a lot better than imo
