How to make lilac jelly, and lilac simple syrup

  • This video gives step by step instructions and tutorial of how to make lilac jelly, and lilac simple syrup. The lilac jelly is the first part of the video, and you'll find the information of lilac simple syrup during the last part.
    This practice is good for any floral jelly, and any flower can be substituted!

    Thanks for the video, btw it’s not roaring boil but rolling boil. Also you mentioned blueberries but I didn’t see you add blueberries. Thanks!

      Yes you’re right rolling boil. Later in the video I ended up mentioning that I didn’t use blueberries after all, but it was a quick sentence 🥰

    Thank you so much for sharing. I am disabled and haven't been able to do this for quite some time due to years of exhaustion. Today I am going to pluck the flowers, make the tea and then freeze it for when I feel up to making this. I am excited to make the syrup as well! Hope you have a wonderful day!

    I've heard of this, but never seen it done. Outstanding. 👍Really wish I could try some.
    My favourite chicken is called Lilac. Not really useful info there, but I had to share. 🤣

      It has a unique flavour that’s for sure! I enjoy lilac syrup on pancakes or as a simple syrup for flavour for lemonade!!

    That’s just amazing. I have never even thought of using lilacs for cooking. They have a beautiful smell and look. I can imagine they taste so light

      It is a distinct aroma, isnt it, and the jelly and syrup taste JUST like the smell, i cant explain it; very floral. Its not for everyone (some members of our family LOVE it, and some not so much haha), but I think its a neat taste!

    Great video! I've heard that the lilac simple syrup is amazing on chocolate cake! I have yet to try it... hoping my lilac bush does well this year. I have a redbud in bloom, and I'm pondering making some redbud jelly...

      Definitely let me know if you try lilac- yes!! You should totally do the redbud ! I will try the lilac syrup on chocolate cake!! Haven’t done that before!

    I just made violet simple syrup and all the tutorials said the syrup is good for like 6 months in the refrigerator, maybe the lilac will last longer than 2 weeks as well? Thanks for the tutorial, I may try jelly and water bath canning for the first time!

      The lilac when canned should last quite a long time I would think. There was one jar I didn’t can because it wasn’t full, and I put it in the fridge but we used it up within a day or two! (Big family with pancakes 🥰). Please let me know how jelly making and canning goes for you if you do it- you should definitely try!!!!

    would you have advice on how to convert a simple syrup into a jelly? we are harvesting fireweed with our school kids and want to make jelly. However, no stores have pectin in stock. Would we be able to convert a simple syrup into a jelly?

      I’m afraid with fireweed and any floral jelly, you require pectin. You can definitely convert a simple syrup into a jelly if you reboil it with pectin at a later date. You can also dry or freeze the fireweed petals to make the jelly at a later date when pectin is in stock.
      Another option is to make it with Apple which has natural pectin that may be enough to turn your simple fireweed syrup into an apple-fireweed jelly

    Just a little tip..if you take a about 1/4c of sugar from your sugar amount an mix with your pectin it will dissolve in a flash❤

      No, unfortunately the petals don’t keep well at all. You can keep the tea (boiled down petals) for a couple days in the fridge though!

      Haha at the end I did mention that I decided not to. I decided not to because I liked the color well enough, it was brightening up with the lemon juice. Now that they’re in jars I maybe wish I would have, but no matter. They’re still delicious ❤️
