When glazing with white (specifically vallejo model color white) it has sometimes given the area a chalky look. Could this be a problem with the paint I chose? Did I just use too much water? Or maybe the red I glazed over was just too dark? Just curious.
Probably a combination of all things. Try to avoid glazing with white if you can, or use medium specially over dark colour

That's also a good choice. It doesn't really matter what white you use, my choice is just Pro-Acryl

OH YEAH
Seems like this would have been a good test for reductive oil painting: applying an oil highlight along the blade then removing the oil paint along sections to reveal the deal blade underneath. That would leave you plenty of time to set your NMM reflections, or move them if the effect needed adjustment.
You read my mind actually. I thought of showcasing a second version using oils for the highlights
