GREEK CHICKEN RECIPE (from @shesinherapron )
4 boneless, skinless chicken breasts
1 tbsp olive oil
1/4 cup Greek Vinaigrette dressing
1/4 cup chicken broth
1 onion, chopped
1 red bell pepper, seeded and sliced
1 tsp dried thyme
small can sliced black olives, drained
1/4 cup feta cheese
Season the chicken however you like. Heat oil in pan over medium-high heat. Add chicken and cook until browned on both sides. Add in Greek dressing and chicken broth. Blend and simmer for 3 minutes. Add onion, thyme, red pepper, olives and feta. Cook until veggies are tender and chicken is done. Serve over rice!

As a native Texan, the Pollo Loco caught my eye. After watching and hearing from y'all how good it was, I KNEW I had to try it. Made it for lunch today and hubby and I both are as "full as a tck" 😋 We've had so many yummy recipes from your channel. I just LOVE your channel and appreciate all of your hard work 😊

I HOPE you see this. I am 82 yrs old and live alone. Loneliness is something I feel a lot. When I invite you and Hubby into my home almost daily it now changes that for me. You both bring me some joy with your obvious love for each other. Your humor and antics crack me up. I will be making some of your recipes because they look so delish and I always cook big pots of everything and freeze my meals. I am also a Jesus believer like you! I discovered by accident when my oven was broken, that you can cook bacon in your air fryer!! I do it that way all the time now. I have the 5.8 qt Cosori, it easily holds 9 strips of bacon. As long as you don’t need the bacon to be all nice and flat, it’s a great way to cook your bacon for other recipes!
I make the creamy mushroom recipe. The only thing I do differently is that I add ground sage and rosemary to the chicken AND the mushrooms while cooking and I use Swiss cheese. So yummy!

Oh my gosh! Pollo Loco sounds amazing and just way too easy to make. I can see myself modifying it a bit for just 2 servings (dinner and leftovers) even using the ready Spanish rice. Queso dip is so versatile and would give it just enough oomph to taste great.

The Chicken Bacon Ranch Potatoes dish sounds really good. I think it would be good using cauliflower instead of the potatoes for a lighter version (or maybe just a different version, LOL)

You need to try Thrive’s tomato products by Jovial. A little pricey but Jovial’s crushed tomatoes, diced tomatoes, etc have such a fresh tomato taste. The tomato paste comes in glass jars with a lid that can be replaced.

I made the salsa ranch chicken roll ups tonight!! They were yummy! Mine were more like burritos after I added everything! ❤🌯
We do a sheet pan version of the greek chicken and serve it in warm Pita bread pockets. We also do a version of the CBR potatoes...only, we took the chicken out, use leftover baked potatoes, and my daughter makes a creamy ranch and cheddar sauce with evaporated milk...then mixes potatoes, chopped cooked bacon (preferably ends) and cream sauce all together...then she bakes it...maybe with some of Gracie's favorite on top🙀...just to heat up the potatoes and meld the flavors together...it's pretty darned good and uses up leftovers to boot! 😂 Y'all have a good weekend, now! 🥰🙏
This one is for Steven! I currently have crock pot taco pasta cooking and guess what I put in it? CREAM CHEESE! Only half a brick. Didn’t want it to be too overwhelming.

Yes, you did great……baby bellas are cremini mushrooms. Same animal. Or should I say, same fungi❣️They are the last stage of growth before they become full grown portobellos ❤️
If I have a lot of bright colored veggies in a recipe ( broccoli, carrots, peppers) when I add them to the pan , I take a very small pinch of sugar and lightly sprinkle it on the veggies. It carmalizes them slightly, and it keeps the colors vibrant through out the cooking time. The pinch of sugar is very small like a quarter to half teaspooon and those calories get divided by the number of servings, so it's not adding much.
I've been making the chicken bacon ranch for years everyone loves it. It's really good with hot sauce and sour cream also 😋💖

Dry seasonings won’t go bad. They might lose some of their potency over time, but won’t go bad. Especially if it contains salt.
No, it doesn’t have to contain salt, all spices go bad regardless and, it’s within a year, so, keep a eye on the dates!

They do not go bad. You may need to use a bit more but they are safe. We waste too much food in the US.

Just wanted to tell you that after all these months I've made the Pollo Loco! I've had the ingredients in my house since soon after I saw this video when it was new. Then I broke my 70 year old leg! Needless to say I wasn't cooking for a while. After my 3rd surgery the end of November 2023 I'm finally almost 100% again and cooking as well as other of my routine things. I absolutely loved this recipe and will make it again and again! Thanks so much for all you do. I never miss a video!ps....I'm also a cat lover. My girl's name is Shirley and she's 5 years old and rules the house! And I'm a southern girl too living in the Piedmont area of NC.

Mandy, these all look delicious and better yet, not time consuming. I made chicken fajitas last night. Always make enough for a second dinner. That’s how I roll after almost 40 years of marriage. I feel I shouldn’t have to cook every single day 😊. I’m going to use what I have from last night and make them as the quesadilla type recipe. I’m very excited that I can repurpose and give it a different spin. I also make the yellow rice that you used. I have been making that rice forever. I just love it. I always sauté cubed red/orange/ yellow bell peppers and onions to mix in with the rice. I also always throw in some thawed out frozen peas, carrots and edamame to make it heartier. I’ve never met a vegetable I didn’t absolutely love. I’m definitely going to try the chicken bacon ranch and the chicken and mushrooms. Everything looks delicious though. Another great vid. That Adobo powder maaay lose a miniscule touch of flavor over time. When using dry herbs, basil, tarragon, etc. Be sure to slightly crush them. Releases the oils that are left inside. I snap bay leaves in 1/2 as well. If you can, avoid the on shelf grocery store cooking wines. They have a TON of salt in them. 3000 mg of salt is the max anyone should have daily. I keep a red, and white wine in the house only for cooking. Like they say, "If you won't drink it, don't cook with it." A-1 episode. Be well all.

Mandy I have a tip you and all of the other Mandyinthemaking friends. If you use a garlic press, you can get every last bit out by pressing a scrap of bread through to push the last of the garlic out. This important for true garlic lovers!

These look delicious! We’ve been on a chicken piccata kick, because my teenage son loves it so much. It’s super easy mix flour, Parmesan cheese, small amount of salt pepper on a plate dredge your chicken in it fry it in a pan with olive oil or avocado oil on each side take it out of the pan add half a cup of chicken broth, 3 tablespoons of fresh lemon juice Fresh garlic, three cloves either diced or use your garlic press a couple teaspoons of capers stir altogether. Put your chicken back in for just a few minutes. Serve with rice or mashed potatoes or noodles. It is so easy and so delicious. Make sure you cut your chicken breast and half like butterfly them so it’s not too thick and they cook quick.
