- Today we make Sausages in Oil or Salami in Oil , of course the same recipe can have different names.
You will need:
Shoulder of Pork 1000 g
Pork Belly 300 g
Sea salt 34 g
Black pepper 5 g
Wine 150ml
Hot pepper 1 tsp
Paprika 1 tsp
Gut 1.5 meters

You can make like this, but you must know the meat. If the meat is not 100% fresh, drying without "chemicals" is so danger. Minimum is Prague salt.

Every fall and winter I make dried Italian sausage. Fathers family has been making it for countless years. Out of dozens of children and grandchildren, I am the only one continuing to make it, so I usually make it in 15-30 lbs increments. I’m lucky enough to have a large, cold basement to hang it all. I’ve never tried to preserve it in oil, but I will absolutely try it now! I love your channel! Cheers from the United States!

My grandfather immigrated to the U.S in the 1900s and this is how he got his sausage and sopressata from Italy. It was illegal to bring uncooked pork into the U.S. so his relatives there packed them in tins of olive oil and U.S. Customs never knew.

Nice recipe! Locally when we make salami or fresh chorizos, we blend some fresh garlic in the red wine that is incorporated into the mixture. The added oil is a good solution so that the salami doesnt harden like a rock over time.👍

Hey, love your channel! I noticed you never use curing salts but only regular salt. I'm new to this and alot of other people insist on using curing salt #1 or #2 because if I don't I risk killing myself with botulism. What do you think?
I never used it but if you have it you can use it , sorry I don’t know how to use it but if you don’t know the origins of the meat it’s a good idea to use it
Instead of in oil, you could also preserve them in vinegar (50/50 vinegar/water). Such pickled sausages are a popular bar food in Czech pubs, and they are called utopenci (which translates to drowned men). In addition to the sausages, you could also add some spices and veggies, like onions, peppers, carrots, etc.

Wow that looks absolutely delicious love you videos. I have a question I can't eat pork anymore for healthy issues would it be possible if you can make a video with all beef 🙏? I would definitely love to try this recipe
For religious reasons, some cannot eat pork. But for health? You would still need a large fat to meat ratio, which would be no healthier.
For the meat beef is fine , the problem is the fat 🤔 you need pork fat.

Greetings! I have made the sausage as per your instructions. The upper part of the sausage that hangs is a little to dry, so I will put them in oil as indicated. Is there another reason for putting them in oil beside preserving?

Is it possibke not to use Wine or alcohol in general ? Would that cause any bacteria or mold issues? Can I instead use a little bit of vinegar ?

There are vegetable-based casings so I thought maybe this might work.

Yes 👍🏼 I prefer the meat chopped by hand and for a small quantity it’s easier. But if you make 10 kg for example a grinder will be a good help 😉

I made these on the 30th of Jan . They are in my wine/cheese fridge at 54f. It has been almost 3 weeks and still no white mold has formed. Is this a bad thing?🤷♂️ i’d rather not get food poisoned if it is.

Salt Cured is not raw.
If you are a little paranoid about the source of the meat, the USDA recommends freezing your pork for 30 days before processing. This will kill any parasites if there were any.
