After pulling the fatline outta the tail, I usually like to stuff the cavity with a mixture of breadcrumbs, spices, garlic, minced onions, minced bacon and a "splash" of bourbon. Trussing the tail will keep stuffing locked in place and will make the tail meat extra moist. Mmmmmm

I swear, to this day, that was the best cut of meat I’ve ever eaten in my life! He smoked it for hours and it was spoon tender!
