Fermented food helps populate the GI tract with healthy bacteria. It's one reason why people who live in countries that eat fermented foods live longer and are on average thinner. In America, we pretty much only have sauerkraut and that's pasteurized, meaning no probiotics.

Brilliant for the owner. With everything fermented and preserved, they should never have to worry about food waste.

Sounds like the snack we had to chase the dakine pakalolo munchies we would have at the end of the month before the check came. Most time because that´s what was left to eat in the fridge. But besides the P. B. and kimchi we added pickled mango, "Shotz", broke the mouth onolicious!
