Well... Mel Brooks wrote it, I read he's a very funny man who can tell a lot of stories about his movies.
It was mostly because when Dark Helmet taunted his right hand man, he said "WHAT ARE YOU, SAUNDERZ, CHICKEN!?" I believe the name was put for that only one joke. And a good one, at that!
