Ohh my gosh I LOVE YOU as a vegan influencer!! I love how by you it doesn't feel shoved down my throat and you priase anyone who is just tring to have more fruits and veggies in thier diet and not making them feel bad or but down for thier choices and not acting supirior to them. I just really appriciate it and it makes me more willing and wanting to try to incorporate more of it into my own lifestyle!

The more I educated myself about diet, health, animal welfare, and the environment is when I said that’s it. I can no longer follow the so called Standard American Diet anymore. I need to take my health into my own hands. Thank you for helping me in my journey ... your recipes are delicious and have given me such a wide range of options with my daily meal planning. I wish I could eat gourmet vegan food all day every day. I could never eat 30 bananas a day. Gourmet vegan food is the best food on the planet. However, local mangos are the best fruit I have ever had, ever ever. PS I sat through a taco hell commercial to get to your video so you better make it good.
I do that with left over veggies. Roast and Throw in the instant pot. I also add some sort v nut or seeds as they soften. Then use a hand blender which also saves all the dishes lol We love soup for breakfasts and use as sauces over other meals or just over a grain or potatoes yum

I am active but I don’t think you have to do extra physical activity to eat this way. Moving your body is healthy for more than just weight management, it effects mental health and sleep and hormones and so many things but if you find that you’re gaining weight by eating this way, maybe try to focus on simplifying your diet. I don’t know what you’re eating now but whatever it is, try adding as many fruits and veggies to your plate as possible. The “closer to nature” meaning as minimally processed as possible the better. It’s not about eating less, I eat a lot, but it’s about eating well and focusing on foods that nourish and energize. I’m not a doctor obviously so if you notice you’re gaining a lot of weight, I would see a dietitian for some tips ☺️💚 Let me know how it goes and if you learn something that might be helpful to share in the comments! I’m sure there are a lot of people who have experienced what you’re going through so thanks for being honest and sharing. Also, my weight fluctuates based on how much junk I’m eating, whether or not I’m stressed, etc so don’t beat yourself up about it. You’re more than a number on the scale, remember that. 💚
