    This was great! I wasnt able to strain the lemon zest out though, and that was a bit irritating, and it made wayyyy too little. So I made a second batch, this time chocolate flavor, doubled the quantity and that made 3 nice small pudding cups :) i used 1 tbsp + 1 tsp cocoa powder and I added about 30-40g chopped up dark cooking chocolate, and a little extra sugar to combat the bitterness of the chocolate. It was REALLY delicious, my family loved it! I couldn't believe how quick and easy it was

    I prepared this dessert today and it was really good, like a pudding :)
    I added a bit of ginger as well in it, but I am thinking of a way to make the lemon taste more powerful. I make the oat milk myself by blending one part oat flakes and three parts water (and some dates to sweeten it), and then I strain it. What if I used a part lemon juice instead of water? Do you think it would work? I would also add less sugar in that case because lemons have quite a lot of their own.
    I also wanted to say that I discovered your channel yesterday by just browsing through CZcams, and I love the presentation of your videos (I watched most of them already), the humor, the fact that you put a lot of effort. Your videos are really entertaining, they're quite straightforward, and full of valuable information and interesting techniques. I cannot wait to share your recipes with friends and family (giving you full credit, of course). :)
    All in all, I think you are amazing chefs, with a unique approach to gastronomy and youtubing, so please continue to make awesome videos because we have a lot to learn from you! :)

      Lightnday Very kind of you to say that, thank you very much! We are professional chefs and we have been working very hard for this channel during the last year, so positive feedback is always very much appreciated :)
      In regard to the recipe; I don't think that the method you described to add an extra lemony note would work. Your milk will end up quite sour and the final custard too. You can always try, but judging from the proportions you've mentioned I'm quite sure that it won't turn out as good as you expect. For an extra lemony note, I would simply add more lemon zest, or even grate it to release more flavor.
      Many thanks for following us and for watching so many of our videos ;)

    I made this custard, and it was pretty good, considering it's vegan and not made with any fat, cream, or eggs. The lemon zest kinda threw me off a bit, but it was an interesting texture lol I think the next time I make it, I will use vanilla flavor instead. Thanks for sharing this recipe!

      Olivia I Thank you for your comment. I'm sorry to hear that you didn't enjoy the custard with the lemon zest, maybe you added too much? If you don't like the bits of lemon inside you can always strain it to make it smooth. Anyway vanilla work just as well, if not better, as it does chamomile, which is one of our favourite ;-) Thanks for watching and for leaving your feedback

      The Vegan Corner It actually came out delicious with the vanilla and cardamom! I ground up fresh cardamom pods and used a pinch of it, then added the vanilla extract. It was sooo yummy and I ate the whole thing lol. I also added a bit more organic cane sugar this time. Because of your recipe, I went to learn how to make my own oat milk, too. Amazing! I will be making this again soon .. and I will need to double the recipe lol :)

      It would be too thin for that, but the idea behind the recipe is the same so you can thicken it with more flour and then use it for a mille feuille.

    is there a substitute for corn starch? would something like tapioca starch or xanthan gum work?

    • @thevegancorner
      @thevegancorner  Před 9 lety +1

      Louise Heiwood Tapioca starch will make the custard a bit more elastic and not very pleasant to eat, and xanthan gum is even worse. The only other good option I can think of right now would be all-purpose flour, but that will yield a non gluten-free final custard. I hope this helps. Thanks for watching :)

    Would adding more starch make the custard thicker?

    • @thevegancorner
      @thevegancorner  Před 3 lety +1

      Yes, it certainly will. However, starch is known to mess up with flavour, so the more of it you use it, the more it will cover the flavour of the other ingredients. I hope it helps.

    • @thevegancorner
      @thevegancorner  Před 6 lety

      Not really, unless you want to use saffron or food colouring. That being said, the turmeric is just for colour, so you can skip it and it won't change the flavour, although the final custard will be white and not yellow.

    • @thevegancorner
      @thevegancorner  Před 8 lety +2

      The acidity of lemon juice will completely impair the ability of the starch to thicken, and you will get a liquid sauce, rather than a custard.

    If I want to make one of chocolate, should I use cocoa powder or chocolate? And how much?

    • @thevegancorner
      @thevegancorner  Před 6 lety +2

      I made it with chocolate flavour only a few times but never weighting the ingredients. I believe that for these quantities, 1 tsp of cocoa powder will suffice to give it a delicate chocolate flavour, and 1 tbsp will make it more flavoursome but much darker and thicker. in regard to regular chocolate, that could also work, but generally with this kind of custards cocoa powder is preferable, and should be mixed with the sugar or with the starch first to improve dispersion in the liquid during mixing. I hope this helps

      @thevegancorner  Před 8 lety +1

      Processed sugar is not a heathy food, and no expert will tell you otherwise. In regard to weight gain, low-carb diets are pretty popular, which is why people tend to stay away from carbs of all sorts, processed or not, but that doesn't mean that they will make you fat. Once again, I'm no expert, so you might want to do your own research.
