I do a pizza neapolitan, in the style of amatriciana! Just tomato sauce and guanciale, topped with pecarino. Honestly crave that pie everyday!

Pizza carbonara is bloody awesome!!!! I wanted to order a pizza tonight and the restaurant offers it with.... *start counting to 50 from here* tomato sauce, "cheese" (should be parmesan! not some general form..cheese" ((I am from Netherlands, we got loads of different kind of cheese))), ham(WTH?), salame (eh??), and spek (translates to.. errr.. fat? "spek" is from the pork ok. bacon comes closest to the translation but you need guancale!) I have to add EGG as an additive!!!! Can you image??? One ingredient that makes the foundation of Carbonara I have to add!!! ARGGHHH!!!! I am 0% Italian but things like this bring out the Italian in me. Can't imagine what this stupidity does to Italians. Things that make Carbonara are additives and things that shouldn't be mentioned in the same sentence with carbonara or default??? ARGGHH!! I notice that Vincenzo uses pecorino though... Seen several recipes where some use peco, some use peco+parm. But at Lago di Garda I was told to just use Parmasan. Guancale is already salty so adding a salty cheese like Peco isn't needed... better to just use Parma then.... Guess it comes down to your own liking? **confused**
Vincenzo are you really out of your mind? You might get in trouble for this, I'm not Italian though but this is crazy. I'm worried that your gonna get in trouble for putting pasta on a pizza. I've even learned what not to do with Italian food from other youtube videos. So I know how to cook Italian food the right way now.

That's not it chef... Use 3 egg yolks just the yolks for the sauce so it will be thicker from the beginning. Put the oil from the guanciale while still hot when makin the sauce. Now put some ice and a little pecorino on the dough. When ready just put the sauce all over the pizza and the guanciale and eat it like that. There's no cooked egg/omlette nor mozzarella in "carbonara"!!!
I could lose my Italian Passport with this Carbonara series but I had a lot of fun challenging myself with these Carbonara Creations. I hope everyone appreciate this series made with love for you
