    I’m basically a (Pastry Chef) retired now and I love watching your Channel! I sincerely admire your work, your cakes are stunning! I also appreciate your patience. Over the years I have tried to teach several of my friends how to bake or decorate their own cakes. Basically so they would stop asking me for free cakes. (Seriously l would be approached by someone saying, “I’m a friend’s friend of your second cousin, twice removed. Can I have a FREE CAKE or Family Discount?” OK maybe I exaggerated a bit on that one. But I’m sure you understand what I mean. Seriously the only people I have patience for are my grandchildren. I have a tendency to smack people with my silicone spatula if they’re NOT paying attention. 😂🤣😂
    Not only are your cakes absolutely beautiful... You’re a wonderful instructor, I do especially admire the way you leave in an error and then teach how to correct them. ♥️👍🏼👏🏼👏🏼👏🏼

    Checking in on this 'old' video years after it was made. I know this will sound a bit odd but what I love most here is how amateurish you were when you started out. You probably cringe seeing how you demonstrated back then but it is actually very relatable.I love your current, far more slick videos too but possibly learned even more from this as it seemed so doable. Thank you!

    I have silicon sheet kind mold.. Like a flat sheet & it has craving of various shapes..like a cake, heart, etc.. Can u please suggest me how to use it? Can I fill in with buttercream or any other frosting & freeze it for the shape? But I'm afraid whether it will come out clean? Would I need apply a layer in form of any powder/grease ? Please suggest if possible 😊 It would be great if I come across a video of u trying it too 🤩

      Unfortunately it only works with frosting that gets very firm when it's cold. My cream cheese recipe stays soft even when it's cold, so cream cheese would only work if your recipe is much stiffer. You could try freezing it to make it this firm but I haven't tried personally.

    Do we need extra stiff buttercream for this technique? Or did you chill down your buttercream for this technique?
    Please make another part of this video to teach us the making of buttercream for this cake.
    One last question: what was your room temperature when you made these cakes?

    What is the name of the yellow food coloring that you put on the top of the last (hot air balloon) cake? It is such a lovely shade! This is such a fun tutorial! Thank you for sharing!

      Thanks! The border on top of the cake was just plain vanilla buttercream - it's an off-white colour but I guess the lighting makes it look yellow!

    I can't get my hands on acetate rolls, especially with the corona virus social distancing and isolation. can I use stiff waxing paper or aluminum foil instead? or even normal plastic wrap?

      Aluminum Foil and Wax Paper will definitely not work, for the simple fact your frosting will stick to it. “Parchment Paper” works occasionally, ONLY if your extremely design is extremely light. (I’m referring to weight not color) Still using “Parchment Paper is not advisable! Amazon is still up and running but they did extend their delivery times. Except on items that are absolute necessities like baby infant formula, diapers medications etc. etc. etc.
      BTW, you can trust my advice for two reasons; I’m a grandma 👵🏻😊😉 also a retired professional pastry chef for nearly 40 years. Good Luck and Stay Healthy.

      It depends on the consistency of the icing. It needs to get very firm when it sets so you'd need quite a lot of sugar in the icing for that technique to work with cream cheese

      I haven't tried but I don't think it would work because the frosting has to get very firm when it sets so that you can peel the acetate off

    For the technique 2:39 I want to do use two colors would I do the same thing you’re doing and blend it together as so? Can this work on wax paper if I have a taller cake?

      Chefmaster for these cakes but I also use Americolor and Wilton
