INGREDIENTS
12 oz Rotini Pasta
1 to 1 1/2 cups Italian dressing
4 oz mini pepperoni
3 oz salami
8 oz mozzarella pearls
1 cucumber
6 oz to 8oz grape tomatoes
1/4 medium red onion
3 oz black olives
1/4 cup grated parmesan cheese
1/4 cup fresh parsley
1 tsp dry Italian herb blend
1 crushed red pepper flakes
1/2 tsp paprika
1/4 tsp black pepper

If you are going to have it the next day, it is better to wait to add the tomatoes to just before you are going to serve it or at least the same day you serve it. Otherwise they get mushy.

I use whole grape tomatoes so they don’t get mushy.

@@conniesisco6468 I live down here in Corpus Christi and grow all kinds of tomatoes almost year round.
I cut grape tomatoes in half, make a simple vinaigrette with olive oil, red wine or 4 yo DOCG balsamic vinegar, mustard, and finely cut garlic or shallot.
Let that marinate overnight then toss that in with fresh greens the next day.
It's the best salad you'll have.

OMGosh Angelica! This is almost identical to my recipe! I leave out the black olives because my husband cannot stand them, and I use Wishbone Robusto Italian dressing. Everything else is the same, and you're absolutely right, it's the best pasta salad EVER!

I forgot to mention I made my own copycat Olive Garden dressing it was great
I make this pasta salad with Greek salad dressing but I chop the red onions first and then add them to a bowl with the dressing and let the onions soak while I prepare everything else. It takes that harsh bite out of the red onions but leaves the flavor.

I use dressing from Aldi, it is the Specialty Garlic Balsamic. It is sooo good and sweet.
I could eat the whole bowl 😋 I recently found Goya brand black olives at my HEB. Great brand, much deeper olive flavor.
I'm 56 and have watched many many food tutorials...not only is this recipe the bomb, but you are very pleasant and sweet to show new beginners everything they need to know..very simple and easy directions ..I'm subscribing and liked !!!
If you want to pump up the volume on the flavor you can take a little bit of the dressing along with the dry spices and toss the pasta with them right after draining and before spreading on the baking sheet to cool. As it cools the pasta will absorb the dressing and flavors from the spices. The oil in the dressing will also make the pasta less sticky/clumpy when it comes time to mix everything together.
My grandmother always rinsed with cold water. It stops the pasta from cooking further. Then lay it on the pan to dry.

I like to add McCormick Salad Supreme Seasoning. It's very similar to all of the same seasonings Angelica uses. This salad is so delicious.

Girl, I have an amazing pasta salad recipe too, and when that Olive Garden dressing came out, I knew it was gonna be good. That stuff just works SO WELL for pasta salads.
I bring cukes in separate container. Some people dont like them plus they get weepy. Cant wait to make it. YUM!

Tip: instead of letting the pasta cool on the pan, rinse with cold water immediately when draining to prevent pasta from overcooking 👍
This is one of my favorite pasta salads. My daughter doesn't like fresh tomatoes, so we use sun dried tomatoes instead. It's delicious either way.

Try Kalamata olives next time you make this salad. They are delicious and will definitely have an Italian flare. I make a very similar salad too. Yours looks delicious.
Mine is similar with a few variations. I have recently started using Olive Garden Parmesan Ranch dressing, but I don’t add Parm cheese.
In addition to the tomato, I add broccoli and small cut up carrots for additional veggies and crunch. Try sprinkling slivered almonds on top just before serving. As you would say, “So good!”.
I have put blanched broccoli, sliced grllied chicken, grilled shrimp and roasted brussel spouts in my pasta salads, but my favorite is blanched/ roasted asparagus, artichoke hearts, and sauteed spinach!! If you want protein wuthout the meat, use garbanzo and kidney beans. That's what's so great about pasta salads, you can clean the fridge out and make it with what you got!!! I do agree, tri color rotini is the best, but my daughter loves tri colored cheese tortellini . It's such a versatile dish. I've even mixed in a little mayo to the dressing for a creamy texture. 😊

Hi Angelica. I just made this pasta salad. It is so delicious! I just put the salad into the fridge. Amazingly I was able to find the Olive Garden Dressing at Target. It is almost 1:00 am in Hawaii. I have been thinking about making this for awhile. I had all the ingredients so I went for it. Mozzarella pearls are the Bomb.🤣Love and blessings from Hawaii❤️🙏🌺❤️
I make a pasta salad just like this, but I use cheese tortellini in place of the regular pasta. It is fabulous! It can be used as a side dish or a main meal.

I’ve been making this pasta salad for 20 years and it’s always a hit. I agree that Olive Garden dressing is the way to go but if I didn’t have any, I’ve used any Italian dressing I’ve had on hand. I’ve also tried string cheese cut into bite size pieces and I’ve also used shrimp as my protein. Another veg is jarred mushrooms. As someone mentioned earlier, if you are making this in advance, the tomatoes will get soft. So will the cucumbers. I think it’s best that the salad sits at least 4 hours, if not overnight so that the pasta can absorb some of the dressing, then add your tomatoes and cucumber.

Made this for dinner a few days ago. It's really good. We enjoyed it very much. The only sub we made was green olives instead of black olives.

This is how I make it most of the time and I think it’s perfect but I also like to swap in feta cheese (or feta & grated parm), diced peperoncini, and diced green olives. Pasta salad is super nostalgic to me, like a staple food.
I make this pasta salad and folks love it. Low fat Zesty Italian dressing works well too in this dish. I know it is said not to rinse pasta, but I have too. I rinse it to remove excess starch. I drain the pasta very well. I don’t have a problem with my sauces and seasonings clinging to my rinsed pasta.

My favourite pasta salad is made with cheese tortellini, and I add chopped artichoke hearts, sundried tomatoes, and olives. I mix it with greek dressing with feta. Sometimes I add some chopped salami or whatever I have on hand.

I made the pasta salad two times with a homemade dressing I took the first batch to my gun club for a block shoot and it was a big hit everybody liked it. Second batch went to a family picnic and it all got gone . Then I found the Olive Garden dressing in store . Next time I’ll use that
