    Love the decorative pin on the Z Series and the simplicity of the J series. You can't go wrong with either one.

    I’ve been watching your videos for about a year now and I find your reviews to be SUPER informative. In addition to this video I enjoyed your video on Dalstrong and what type of consumers gravitate towards their products. I love to cook at home and I own a taco catering business so I’m obsessed over chef’s knives. I was on the fences about Cangshan because it’s a company I’ve never heard of until recently. This review sold me on purchasing one for the holidays. Keep up the great work and keep sending out those informative videos amigos! Good day chef!

    I think the mosaic pins are probably my favorite feature, but the spine of the J series is definitely my favorite part about all the knives you reviewed in this video. I personally prefer a thinner spine, so it's right up my alley.

      My hands are 11". They are definitely large. The Cang Shan knives from Costco was my wife's and I first wedding present we bought for ourselves. They fit my hands like a glove. They are very comfortable and keep their sharpness for a long time. Those knives are one of the best investments we've made. Even my wife finds them comfortable, even if they are big.
      My wife's and my respective families grew up with cutco knives, so we are super picky about knives. But we weren't about to spend $2500 on a Cutco set.
      Cang Shan knives are just as aesthetically pleasing as the expensive Cutco or Wustoff knive sets. Also, the wood block that comes with it is beautiful.

    The j series knife is my personal favorite of the 3 you showed us. I say that because the handle, its foreign, stylish and it uses African black wood and I'm originally from Africa and that makes it my favorite feature.

    I was just at Costco the other day and saw a 17 piece set of these knives and I believe they were the S1 Series, do you know the difference between the ones you mentioned and the S1 Series and if it’s more of a bargain set since it was only $230 for that set in Costco Canada?

    Hi Justin what are the pluses and minuses for onset bevels on Japanese knives I did remember you saying your misono ux10 had a 50 50 bevel when they come out with a 70 30 ryoba offset bevel correct me if I'm wrong but if this is correct why did you change it to a normal equal bevel .Regards Dean from oz

    These magnetic sayas really grab my attention because, as I mentioned previously, I make magnetic sayas. I think it's way better than the pin variety. That said I think these are too similar to what I already own for these to be for me. Whoever gets these though it would appear is in for a treat.

    Z series blade style being apt for rocking motion.... Best of both worlds western style blade profile plus japanese style metal treatment. Dont know much about the company, would love to get my hands on one of these!

      Not a good combo imo: harder steel / narrower blade edge shouldn't see any rock or walk chopping. Tap chop, push chop, slicing -yes.

    This is a good introduction to Cangshan. Could you please review or share your thoughts with their A series? And also your thoughts if 14C28N Swedish steel in general.

      I bought the A Series over a year ago. I liked the Cangshan knives so much, I bought the Z Series starter set to keep at our apartment in Bogota. I did a comparison/review. Look for Alan Klevens on CZcams.

    Balance and weight are huge factors for me when purchasing. Especially if you run a prep heavy the majority of your days.

    Loving this series and comparisons! Have you gotten a chance to handle any knives from Fell Knives yet? I stumbled onto them in Brad Leone's holiday gift guide a few months ago, and recently pulled the trigger on the Big Boy knife he produced in collaboration with him. Really loving the knife so far, but haven't gotten to handle any of his other offers.

    The Z-Series is my personal favorite. It kinda reminds me of a Kramer, something with the handle and the bolster area (non sharp edge of the knive). I have a feeling nice things are not as alreciated these days - carbon steel keeps reminding you to be attentive and resoectful to the product. But Im only guessing, as I never actually used one...

    I just figured out asain blade could mean a straight edge rather than a curve one. A straight edge makes it easier to do push cut.

    I've been working in restaurants for a while but recently started developing my passion and want to get better quality knives. Right now I'm using some cheap Walmart ones that work fine but look ridiculous compared to my coworkers shun wustof and Mercer knife sets. I bought the blade guards that they make a few months ago and they hold up great with any of my cheap knives. After watching this video and some others on your channel I'm highly debating on getting them .

    review the TG series, for 60 bucks for a 3 pc. set, thoshe are great.t the 12c27 steel is also prettyt decent steel. usually used by mora for their stainless survival knives.

    I'd like to get to handle a set of these J series. I have recently purchased an upper end Chinese knife set and I'm not real happy with them. The Damascus looked etched on. May favorite feature may be the authentic Japanese look with a more robust Damascus finish, but it's hard to tell when you can't see these knives in person before you purchase.

    I would respect them more if the Z series weren't very obviously modeled to look like a Kramer knife.
    Be proud of your own identity, guys!
    I thrifted an 8" X series chef's knife, and it is every bit as good as my Wüsthof, while retailing for less and looking better.

    Cangshan Cutlery - No Warranty UK
    Cangshan Cutlery provides No Warranty in the UK.
    So Buyer Beware!
    Concern about the quality of Chinese made knives and the fact that Cangshan offer no UK warranty should surely set alarm bells ringing. Cangshan products are too expensive to risk problems with warranty and zero goodwill.
    I found out when on receiving my substandard knife set bought on Amazon UK I contacted Amazon and Cangshan.
    The Amazon/Cangshan tag team responded by passing the blame buck back and forth to each other.
    Finally after days and days of phone calls and emails Amazon resolved the issue, but be advised, do not expect Cangshan's advertised no hassle lifetime warranty. Cangshan customer services inform me that the Cangshan warranty does not cover the UK. Something I wish I'd had known beforehand.

    For the majority of the market( home cooks) spending big money is just senseless! Really there are great knives from wallop, Bengoo and others at a fraction of the price of these knives! It's mostly a status thing spending$150 or more on commercial knives or just showing how wealthy you are! Homeowners just don't use their knives anywhere close to what a chef will use. So spending huge money is not practical! Shop around, be smart, read reviews and don't waste your money on the Harley when the rice burner is three times cheaper!
