- Roast Beef slow-roasted in the oven ensures it’s perfectly tender and evenly cooked all the way through. Every bite is juicy and mouthwatering.

Ingredients For the Roast Beef:
►3-4 lb top-round roast
►3 Tbsp extra light olive oil
►1 Tbsp finely chopped fresh Rosemary
►1 Tbsp minced garlic from 3 cloves
►2 tsp finely chopped thyme leaves or 1/2 tsp dried thyme
►1 1/2 tsp fine sea salt
►1 tsp freshly ground black pepper

►1/4 cup cold water
►1 1/2 Tbsp cornstarch
►1/2 cup dry red wine
►1 1/2 cups beef broth
►1/4 tsp onion powder
►1/4 tsp garlic powder
►1/4 tsp fine sea salt, or to taste
►1/4 tsp freshly ground black pepper, or to taste
►2 Tbsp unsalted butter

Extra pro tip: season with salt and rest for a day or two in the fridge before roasting. The salt has time to season the meat through the inside, and it makes the meat super tender too.

My mother made roast beef in last Christmas, which was so delicious.

Indeed. I tend to overcook roast beef.
My trick is to use a very thin long deli meat/bread cutting knife. Then make thin slices. Keep an eye on the internal temp. This will give you tender bites.

This recipe is delicious. We have very picky eaters in our house. They ate everything they put on there plate. For the first time ever I packed a home made roast beef sandwich in my lunch. This is on our rotation of dinners. Oh for dessert the chocolate cake goes well. It is so good.
