Almond cookie ingredients:
3 cups - almond flour amzn.to/2htvyB2
1/2 tsp - salt
Sugar substitute equal to 1 cup sugar amzn.to/2hReroU
1 egg lightly beaten
8 Tbsp - unsalted butter, melted (1 stick)
1/2 tsp - almond extract
Topping (optional):
Sliced almond
Egg white
Sprinkle of granulated sugar substitute
Recipe yields approx. 26 cookies.

I've made these a few times and absolutely love them. They remind me of Chinese almond cookies that I used to get at a Chinese restaurant when I was younger. For years I looked for the brand of cookies they bought but I couldn't remember it. I even tried contacting the restaurant and they since closed down. My oven is finally working after being broken for 2 and a half weeks!
This was the first thing that I baked!
I decided to use date paste mixed with hot water as my sugar substitute, I used olive oil instead of butter (gotta save that butter), and I didn't have almond extract so I used vanilla extract!
I also decided to add in some baking soda for a little bit of puff, and I added in an extra 1/2 cup of almond flour because of the date paste mixed with water
They turned out really well!!

I added some cacao chocolate and a bit of baking soda. Made them into chocolate chip cookies lol..They are amazing!!

Wow! This is the first video I see of you, so I wasnât sure what to expect. So many CZcamsrs promise great cookies and you get some grainy almond mess in your mouth with so so flavor. Yours is wonderful! Thank you! The consistency and flavor are great! This is a chewy cookie with great flavor. I used allulose 1 cup, I knew is less sweet than sugar but it seem so much⊠anyway, next time I will add 1.3 cup when using allulose. So I can get the right sweetness. He did warned to do 1 cup of sweetener equivalent of sugar.

Omg these are good, so tomorrow is Valentine's day and I just needed something to take the edge off from seeing candy everywhere. I halved the recipe and used a small egg, I used Splenda as that's all I had, it made 12 cookies and they are delicious, don't skip the almond extract it makes the cookie. I ate two and will freeze the rest.

These came out just great. However, if you are using a Monkfruit sweetner, you might lessen the sugar by half.
