Mr. Kornfeld, the "bitch ass cardboard" helps cakes from collapsing in on themselves. In a traditional tiered wedding cake, there would be dowels in each of the bottom tiers, cardboard between the cakes, and sometimes a central dowel going through the whole cake. This helps the cake not collapse and still look pretty. - A Concerned Baker. P.S. Loved the video!

Zach, seriously: The cardboard is a support item. They do this in every cake. When you and Maggie go to order your cake, they will put supports in it, including dowels and those cardboard plates. If not, the damned cake will lean worse than the Walmart cake did.

Here's how you hack the no-tip system at Ralph's:
You go there during a non-busy hour. I'm assuming your deli and bakery departments are connected, so I'd say sometime between 9 and noon, or 2:30 and 5 in the evening would be the best times.
You order a lil something, could be some cheese, could be some potato salad, could be some potato wedges. You ring it up at the deli counter. You pay in cash - the amount you were gonna tip, and then you tell them to keep the change.
Or, you can slide it into their hand and say, "this is for you. Thanks" when none of their coworkers are looking.
Company policy is to not take tips, but you know what they say. Boss makes a million, we make a dime. We oughtta take tips on company time

I worked for a Kroger owned bakery (Mariano's) and lemme tell you, our cake decorators worked some damn magic. Their talents were wasted a grocery store bakery
Iâve been a cake decorator for 9 years and we make big wedding cakes. Usually we ask for a 2 week notice for wedding cakes, so the fact that you got several in such a short notice is amazing!!
These cakes are also sitting in a freezer for months so itâs easy to just pull them out and ice them lol
it's literally premade frozen cake that they slap frosting on and stick in a box. they're wildly over priced.

Also, they 10000% planned it to where it just says "tit" in one frame
The only reason the ice cream cake didn't have cardboard in between is because ice cream is dense enough to hold the weight of the cake above it. A traditional cake at minimum, needs the card board to support it. A better tiered cake would also have dowels under it to prevent the top layer from sinking into the bottom.

I really love how this series takes the opportunity to really recognize and show appreciation for people in job positions that often get undervalued and looked down upon. First servers and other restaurant workers and now grocery store employees. It wasn't until the pandemic that these essential workers got such recognition and it's great to see Zach taking the opportunity to celebrate and appreciate them.
This! And the people they encounter so often do a fantastic job.

This was probably incredibly stressful for those workers. The pressure of someone possibly running someoneâs wedding. I hope they called all the people back and said they loved their cakes !
The fact that all these places TOOK the cake order the day before for a tearcake. Is a miracle on its own. I work for one of those stores as a cake decorator đ I can assure you I would have been SO MAD. And yes that's how you stack them. And sometimes stores don't have the equipment to stack them properly thats why they say no to tear cakes.

A general tip for anyone trying to make a chocolate cake: make it with strong black coffee. The coffee will bring out the flavors and it will taste much better. Ever since I started baking chocolate cakes using coffee I can now always tell when one does not use coffee in the batter, it just tastes bland and incomplete.
Yes! And it does NOT taste like coffee!
Stout works really well too. I usually use it and a bit of espresso powder

Tier cakes do typically have a support in the center, gives it stability. Straws (dowels) and cardboard base to keep the top tier(s) from squishing the bottom tier(s)
